These Harry Potter Inspired ButterBeer Blondies are a truly magical and cosy bake – perfect for any Autumnal baking. The ‘butter beer’ flavour is actually just butterscotch pudding (or angel delight) powder. The combination of this with white chocolate chunks is rich and caramel-ly and perfect with a cosy cup of tea whilst watching movies!

This is a fabulously easy blondie recipe, great to create something to snack on for your next cosy date night or evening in! This is easy enough to make with the family, and the edible glitter adds an extra little bit of magic. Edible glitter is easy enough to find online (Amazon), or in craft stores – some major supermarkets will stock it in the baking section too.

The base of the blondies is made with lots of melted white chocolate which creates this insanely fudgy texture. When this meets white chocolate chunks, you’re in for a good time! These are pretty versatile, so feel free to add nuts, or change up the type of chocolate chunks that get added at the end! However, I think the combo of white chocolate/butterscotch is really the best!

  • Chocolate: I use lots of chopped white chocolate as a mix in, but chocolate chips or really any chocolate will work!ย 
  • Butterscotch: For those in the UK, you will want to use Butterscotch angel delight powder. For others, any butterscotch pudding powder will work!
  • Edible Glitter: Simply scatter this on at the end. It’s entirely optional but I think it looks pretty magical!

Ingredients

  • 2 (2) Medium Free Range Eggs
  • 80 g (ยฝ cup) Granulated Sugar
  • 200 g (1 ยฝ cups) White Chocolate Melted
  • 110 g (8 tbsp) Unsalted Butter Melted
  • 2 tsp (2 tsp) Vanilla Extract
  • 60 g (2.12 oz) Butterscotch Pudding Powder (in UK: one standard packet of Angel Delight powder)
  • 150 g (1 ยผ cups) Plain Flour
  • 150 g (1 ยผ cups) White Chocolate Roughly Chopped
  • Edible Glitter to Decorate Optional

Instructions

  • Preheat the oven to 370โ„‰/180โ„ƒ and line an 8 inch baking tin.
  • Start by whisking the eggs on high speed with an electric mixer for 5 minutes, until pale and fluffy. Add the sugar and whisk again.
  • Add in the melted white chocolate, melted butter and vanilla extract and whisk until combined. Fold in the flour and butterscotch powder until totally combined.
  • Add the chopped chocolate and fold again. Pour into the lined tin and bake 30 minutes. Let cool before decorating with powdered sugar/edible glitter. Slice and serve!
