This Lucky Charms Cereal Bark is such a fun no-bake treat with a LOT of space for changes and versatility! It makes for the cutest snack, to be kept in the refrigerator ready for you to just grab pieces of whenever the mood hits!

By combining white chocolate with marshmallows and all that crunchy cereal, we get a really easy treat. You can totally change this up to suit whatever you have in the cupboard or your preferred additions. The recipe is so straightforward, consisting of melting white chocolate. Spread this on a baking sheet before sprinkling over the toppings. Then, let it set in the refrigerator before breaking it up.

Ingredients Required

There are no specialist ingredients or equipment required for this bake. I can find everything I need at my local supermarket or grocery store. Also, I use a half size sheet pan. This is easily doubled to serve more, but in our household of two, we keep the batch a little smaller. Line the pan using baking parchment to make the chocolate really easy to remove.

  • Good Quality White Chocolate
  • Red/Pink Food Color (Optional)
  • Lucky Charms Cereal
  • Marshmallows
  • Sprinkles

How to Prevent your Chocolate from Seizing

To prevent chocolate from seizing, which happens when chocolate becomes stiff and grainy due to the introduction of moisture or overheating, follow these tips:

  1. Use Dry Utensils and Equipment: Moisture is the enemy of melted chocolate. Make sure all utensils, bowls, and equipment are completely dry before using them with chocolate.
  2. Use Low Heat and Gentle Melting: Chocolate should be melted slowly and gently. Use a double boiler or microwave on low power, stirring frequently to ensure even melting. Avoid direct heat if possible.

  • White Chocolate: Make sure to use high quality chocolate to prevent it from splitting when melting it.
  • Color: Gel color is the best option, but liquid will work too. You only need a drop for that pastel pink color.
  • Add-ins: This is where you can be as creative as you want. Feel free to use whatever cereal, marshmallows, nuts, sprinkles, candy that you have. Just make sure to add it while the chocolate is still melted or it won’t stick!
  • Storage: Once the chocolate has hardened in the fridge, break it up using your hands into the size chunks you like. Keep it in an airtight container in the fridge.

When it comes to storing fresh cookies, it’s essential to maintain their texture and flavor. Here are a few tips to help you store your cookies effectively:

  1. Refrigerator: To keep the chocolate firm, keep your bark in an airtight container in the refrigerator for up to 5 days. You can either keep it just on the sheet pan, but I find breaking it up before putting it into a container is the best option.

Ingredients

  • 1 ½ Cups (200 g) High Quality White Chocolate
  • 3/4 Cups (30 g) Lucky Charms Cereal
  • 3/4 Cups (30 g) Lucky Charms Marshmallows (or any Marshmallows)
  • Pastel Sprinkles
  • Pink Food Color Optional

Instructions

  • Line a half sized baking sheet with baking paper. Have your other ingredients ready in bowls nearby as once the chocolate is melted you want to move fairly quickly.
  • Create a double boiler to melt the chocolate:
    Bring a half full small/medium saucepan of water to the boil. Reduce to simmer. Place a heatproof bowl over the saucepan, so that it sits steady. Add the white chocolate. Stir to melt this.
  • OPTIONAL FOR FOOD COLOR: Once melted, remove a large tablespoon or two of the chocolate into a small bowl. Add a drop of food color and stir to combine.
  • Pour the white chocolate over the lined baking sheet. Spread it into an even layer with a spatula. If using, add the colored chocolate on top, swirling it in with a spoon.
  • Sprinkle over the cereal, marshmallows and sprinkles. Let firm up in the refrigerator for 2 hours or so before breaking up with your hands. Enjoy!
