Get ready for a real treat with these Ultimate Fudgy Chocolate Brownies. I know everyone has tried a lot of brownie recipes, but I hope this is your last. Whatever your need for brownies is, these will definitely meet your needs and I guarantee people will ask you for the recipe!

These brownies contain 4 types of chocolate and are such a breeze to make. I have eradicated the need for lots of over whisking of eggs or playing with double boilers/bain Maries. I love keeping baking as simple as possible and this is it!

These keep a few days (or a few months if frozen in an airtight container) and are perfect for gifting to your recently dumped friend, school bake sales, family Sunday dessert (do I hear hot brownies with ice cream?) or just to keep around to snack on throughout Netflix marathons.

For these Ultimate Fudgy Chocolate Brownies, I use a basic 8′ square pan (I like this one). I also recommend a good stand mixer or high speed mixer (like this one) to make the brownie mixture. Some tips to really nail these:

  • Butter: The butter in these is interchangeable with margarine – not many recipes will say this, but as long as it’s melted, I’ve found little difference. HOWEVER, you want it to be totally melted in order to get that crispy, shiny top!
  • Brown Sugar: Soft packed light brown sugar gives taste and texture to your baking, it adds to the richness and fudgy texture. Don’t scrimp in favour of granulated unless that really is all you can find!

The Ultimate Fudgy Brownies

Dense, decadent, death by chocolate is to be had in these ultimate chocolate fudgy brownies. With 4 types of chocolate these really are my ultimate recipe. A little extra bake time is fine if you prefer a cake-y brownie – add on about 5 minutes! Melted butter and that brown sugar are crucial for the best texture!

Ingredients

  • 100 g Dark Chocolate Melted
  • 170 g Butter Melted
  • 100 g Granulated Sugar
  • 100 g Light Brown Sugar
  • 2 Medium Eggs
  • 1 tsp Vanilla Extract
  • 85 g Plain Flour
  • 30 g Cocoa Powder
  • 100 g White Chocolate Chopped
  • 100 g Milk Chocolate Chopped

Instructions

  • Pre-heat your oven to 200C/180C Fan/Gas Mark 6. Line an 8" Square Pan with greaseproof paper.
  • In a small bowl, break up the dark chocolate and melt in the microwave in 20 second intervals, stirring in between to make sure it doesn't burn.
  • In a large mixing bowl, whisk together melted butter and both sugars. With an electric/stand mixer, go for a solid 3-5minutes so it is totally combined. Add in the eggs, one at a time and mixing in between. Add the vanilla and mix again.
  • Now, add the chocolate slowly (check it first, to make sure it isn't so hot that it will cook the eggs) and combine once again. 
  • Add the flour and cocoa powder, fold gently into the wet mixture with a rubber spatula or wooden spoon until just combined. Fold in the chopped chocolate.
  • Pour the batter into the lined pan and bake approx 25-30 minutes. Remove pan from oven once cooked, and leave the brownies in the pan on a wire rack until totally cooled. Then remove and slice!
