These dreamy berry crumble bars are deliciously more-ish and will have you reaching for seconds and thirds without a thought! They are comprised of a shortbread base and topping, giving off berry crumble vibes but much easier to divide and eat on the go!

These bars are perfect warm, as they are or topped with ice cream, but they are equally great eaten cold as an on-the-go breakfast or snack! These can easily be made vegan by using a vegan butter alternative – I’ve tried this several times and no other changes to the recipe are needed!

Use any berries, or classic crumble fruits for this (plums, damsons, apples all work well) and they can either be fresh or frozen. If using frozen, I’d suggest letting them thaw a little before using, just to make life easier – alternatively just throw them into the microwave for 30seconds – 1 minute prior to use!

Very Berry Crumble Bars

Serves: 9

Bake Time: 40 minutes
Total Time: 55 minutes

Ingredients:

  • 220g Granulated Sugar
  • 125g Plain Flour
  • 1 tsp Baking Powder
  • 1 tbsp Lemon Zest
  • Salt
  • 110g Butter (softened)
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1/4 Cup Flaked Almonds (Optional)

For the Filling:

  • 4 Cups Berries
  • 100g Granulated Sugar
  • 4 tsp Cornflour
  • 1 tbsp Lemon Juice

Method:

  1. Preheat the oven to 190C/180C Fan/Gas Mark 6. Line a 9×13″ rectangular pan with greaseproof paper.
  2. In a large bowl, combine the sugar, flour, baking powder and salt. Add in the butter, egg and the vanilla extract. Rub together to resemble breadcrumbs. Press 2/3rds of this mixture into the lined pan, pressing down with the back of a large spoon or a mug to ensure it is all compressed.
  3. In another bowl, combine the filling ingredients (berries, sugar, cornflour and lemon juice). Spoon this on top of the base and spread out, before sprinkling over the remaining crumble/shortbread mixture on top. Add the flaked almonds, if using, then bake for 35-40 minutes, until golden brown.
  4. Remove the pan from the oven and let cool before cutting into portions. Alternatively, dive in with spoons whilst still warm – don’t forget the ice cream!
