The perfect light and fluffy scone, crisp edges, white chocolate drizzle and crammed full of berries – these Berry Scones with White Chocolate Drizzle are sure to kick start your Valentines Day off the right way! Also the perfect way to start any weekend, the smell of freshly baked berry scones will have everyone making their way to the kitchen.

As if you needed another reason to make these, they can be made in a food processor (linked my one) – no messy hands and minimal washing up. This also keeps the mixture cold, giving the best fluffy texture. That said, if you want to get the little people more involved in making them, do go for the fingertip rubbing method as it can be very therapeutic.

These make a fabulous Mother’s Day or special day breakfast. You can make the dough ahead and keep cold overnight to bake in the morning, or they do come together quickly enough to make whilst coffee is brewing and your loved one is still in bed!

Here are my tips for the perfect Berry Scones with White Chocolate Drizzle

  • Cold Ingredients: Make sure your milk and butter are fridge-cold (or chilled in the freezer for 10minutes before baking if possible) for the best texture.
  • Overworking: The likelihood is that you’ve had some tough scones in your life. This is the result of overworking the dough. Once all combined, turn the dough straight onto a lined baking sheet, pat with hands for the right height and cut shapes from that. The less handling, the better!
  • Pre-Bake: Prior to baking, use a little egg wash (or vegan milk) and a sprinkle of sugar for that perfectly shiny crust. However, do not brush the sides as this adds weight and can prevent rise.
  • Storage: I find scones just don’t keep well beyond a day. They lose that crisp edge pretty fast, but if you do want to make ahead, store in an airtight container (without any other products that the scones may absorb moisture from) and add the chocolate last minute!
  • Shaping: To create the cutest Valentines gift/breakfast, use a heart shaped cookie cutter! They will lose a little shape during baking but not too much that you’ll lose definition!

Berry Scones with White Chocolate Drizzle

Ingredients

  • 275 g Plain Flour
  • 2 tbsp Granulated Sugar
  • 1 tbsp Baking Powder
  • 110 g Unsalted Butter
  • 75 ml Milk
  • 100 g Frozen Mixed Berries
  • 30 g White Chocolate

Instructions

  • Preheat oven to 210C/190C Fan/Gas 6. Line a large baking tray.
  • In a food processor, or using your hands (see note), combine the flour, sugar and baking powder. Then add the butter and rub in, until the mixture resembles breadcrumbs. 
  • Add the milk, and use a butter/table knife to combine until the mixture forms a shaggy dough. Then add the berries and again, use the knife to combine briefly – you don't want the berries to break down! 
  • Pour the mixture onto the baking tray, pat down to about an inch thick, then cut out using a heart cookie cutter. Optional: brush with a beaten egg/some milk.
  • Bake for 20 minutes, turning halfway, until golden brown. Let cool on a wire rack.
  • Melt the chocolate in the microwave (in 10 second intervals, stirring between). Use a teaspoon to drizzle the chocolate over (fast movements form high up gives the best effect) and serve with coffee!
