These Copycat Costa Fruit & Oat Biscuits (Easily Vegan) are a great bake for the coffee shop lovers. Costa Coffee is a chain of coffee shops in the UK. These little biscuits (cookies) are a delicious little treat and are really so easy to make!

No unusual ingredients, no chill time and really easily made vegan, these are great for a weekend bake. This easy biscuit recipe is made using one bowl. The golden syrup needs to be warmed up before adding in, and acts as a binder (in place of eggs). If you can’t find golden syrup, anything similar will work: maple syrup, corn syrup, light molasses.

As is common on my site, this is a mega versatile recipe. You could absolutely sub the mixed fruit for any similar dried fruit/raisin combo and they’ll work just as well. Similarly, feel free to change how big they are to make more or fewer. If you do this, however, make sure to adjust the bake time up or down accordingly. This is a great cookie dough to make ahead and keep in the fridge or freezer (wrap air tight) until needed!

  • Butter: Make sure to use room temperature/soft butter, otherwise it’ll be hard to mix!
  • Vegan: Using vegan butter/spread allows these to be vegan. Of course, dairy butter is also fine.
  • Sugars: The combination of light brown and granulated sugars really contributes to a chewy centre and perfect bake. 
  • Oats: Jumbo/Rolled oats are the best choice as they keep their texture.
  • Texture: The final texture should be fairly crumbly, but can be ‘squished’ to shape in your hands.
  • Syrup: Use warm golden syrup. You can sub for maple syrup, agave, honey (not vegan), or light corn syrup.

I bake these Copycat Costa Fruit & Oat Biscuits (Easily Vegan) on classic sheet pans (like these) and try to opt for silicone baking mats (these are the ones I use) as they’re better for the planet! Ingredients

  • 130 g Plain Flour
  • 120 g Rolled Oats
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Ground Cinnamon
  • 100 g Golden Syrup Warm/Runny
  • 100 g Granulated Sugar
  • 100 g Butter Room Temp
  • 100 g Dried Mixed Fruit

Instructions

  • Preheat the oven to 200C/180C Fan/Gas 6. Line 2/3 large baking sheets.
  • Put the golden syrup into a small bowl and heat in the microwave for 20 seconds to loosen.
  • Combine all dry ingredients in a large bowl (flour, oats, baking powder, baking soda, cinnamon).
  • Add the syrup, butter, and sugar. Use a wooden spoon to bring together.
  • Scoop tbsp sized balls of the mixture, roll into a log/oval shape and lay out on the cookie trays (at least 2 inches apart). Bake for 10-12 minutes, until golden brown. Let cool on a wire rack before serving.
