One of the wonderful things about baking, and creating in general, is the ability to literally create childhood nostalgia – and with these Cosmic Brownie Cups, this is in the form of little handheld brownies! Think fudgy chocolate brownie, FILLED with an easy chocolate ganache and topped with cosmic sprinkles. AKA, the perfect bite.
Chocolate ganache is one of those things that tastes amazing, but can stir (lol get it?) a little fear in the hearts of some bakers. Trust me though, it is one of the easiest things in baking – that creates pastry chef level results. Of course, feel free to use whatever sprinkles you like, but these cosmic ones are fairly easy to find in the large grocery stores. The initial bite of one of these is all the goodness of a brownie, plus a large ratio of the ganache – because honestly, why not add a little extra than the original cosmic brownies use.
For these brownies, we rely heavily on the melted butter and light brown sugar to give the fudgy texture and super shiny topping. To make the shiny top on a brownie, there are arguments as to whether itโs the egg, or the molten sugar in the butter, so letโs make sure to do both. This recipe makes 12 brownie cups, made in a standard sized muffin tin. They keep well in the fridge for a few days. That said, they donโt last long if youโve got lots of happy hungry mouths in the house!

Nostalgia, but make it easy…
If you grew up in the 90s or early 2000s, there is a good chance that you remember unwrapping a Little Debbie Cosmic Brownie in your lunchbox or grabbing one as an after-school snack. They were fudgy, chocolatey, and topped with those colorful candy-coated sprinkles that made every bite feel just a little more magical.
Now imagine taking that nostalgic flavor and turning it into something even more fun โ a cupcake-style dessert that is part brownie, part candy shop, and 100 percent delicious. That is exactly what these Cosmic Brownie Cups are.
Whether you are baking for a birthday party, a family gathering, or just a quiet weekend treat, these brownie cups bring a playful twist to a beloved classic. They are easy enough for beginner bakers but still impressive enough to make guests think you spent all afternoon in the kitchen.
What Are Cosmic Brownie Cups?
Think of them as the love child of a classic brownie and a cupcake. Instead of baking brownies in a large pan and cutting them into squares, you bake them in a muffin tin. This gives each brownie its own little wrapper and makes them portable, easy to serve, and perfectly portioned.
Each brownie cup is topped with a smooth layer of chocolate ganache and sprinkled with bright rainbow candies, just like the original Cosmic Brownies. The result is a dessert that feels whimsical, indulgent, and ready for any celebration.

- Beginner Friendly โ You do not need advanced baking skills. If you can measure, mix, and pour, you can make these.

WHEN IT COMES TO MAKING THE BEST BROWNIES, HERE ARE A FEW TIPS TO KEEP IN MIND:
- Quality Ingredients: Always use high-quality ingredients in your brownie recipe. This includes using good quality chocolate, cocoa powder, and fresh eggs. It will make a noticeable difference in the taste and texture of the brownies.
- Donโt Overmix: When combining the ingredients, be gentle and avoid overmixing the batter. Overmixing can lead to a denser and tougher texture. Mix until the ingredients are just combined.
- Proper Pan Size: Use the recommended pan size mentioned in the recipe. Using a smaller or larger pan can affect the baking time and the texture of the brownies. For this brownie recipe, we use a standard muffin tin with regular muffin liners.
- Do Not Overbake: Keep a close eye on the brownies while they are baking and avoid overbaking them. A slightly underbaked brownie will be fudgy and moist, while an overbaked one can turn out dry. Insert a toothpick into the center โ if it comes out with a few moist crumbs, the brownies are done.
- Let Them Cool: Allow the brownies to cool completely in the pan before cutting and serving. This helps them to set and ensures that they hold their shape. It also allows the flavors to develop fully.
- Experiment with Additions: Feel free to get creative with your brownie recipe by changing up the chocolate chips/chocolate chunks, or by adding nuts or fruit. Just make sure not to overload the batter, as it may affect the texture.

The Key Elements of a Perfect Cosmic Brownie Cup
To really nail the flavor and texture, there are a few things to keep in mind.
1. The Brownie Base
A great brownie starts with good chocolate. You can use cocoa powder, melted chocolate, or a combination of both for a richer flavor. The texture should be dense and fudgy, not airy like cake. Since these bake in a muffin tin, keep a close eye on baking time so they do not overbake.
2. The Ganache Topping
Ganache is what makes these cups feel extra indulgent. It is simply a mixture of chocolate and cream that melts into a silky, glossy layer on top of the brownies. Let the brownies cool completely before adding the ganache so it sets properly.
3. The Signature Candy Sprinkles
The colorful, candy-coated chocolate bits are what make this recipe โcosmic.โ You can use rainbow-coated mini chips, chocolate pearls, or even chopped candy-coated chocolates. Scatter them on top before the ganache sets so they stick in place.

Tips for Success: Cosmic Brownie Cups
Even though this is a beginner-friendly dessert, a few tips can help ensure yours turn out bakery-worthy every time.
- Do Not Overbake โ Brownies should still be slightly soft in the center when you take them out. They will firm up as they cool.
- Measure Accurately โ Baking is science, so be sure to measure flour and cocoa powder correctly for the right texture.
- Cool Before Topping โ Ganache will slide off if the brownies are warm.
- Use Good Chocolate โ Since the flavor is chocolate-heavy, choose a quality brand for both the brownie base and ganache.
- Play With Flavors โ Add a hint of espresso powder to the batter for richer chocolate flavor, or swap the vanilla for peppermint extract during the holidays.
Fun Variations
While the classic version will always be a winner, you can have fun experimenting with these brownie cups.
- Peanut Butter Cosmic Cups โ Add a swirl of peanut butter into the batter or drizzle some over the ganache.
- Birthday Cake Version โ Swap the chocolate ganache for white chocolate and use rainbow sprinkles for a birthday feel.
- Mint Chocolate Cosmic Cups โ Add mint extract to the brownie batter and use green candy sprinkles.
- Salted Caramel Cosmic Cups โ Drizzle caramel sauce over the ganache and sprinkle with a touch of sea salt.
Storing and Serving
The great thing about these brownie cups is that they store well and can be made ahead.
- Room Temperature โ Store in an airtight container for up to 3 days.
- Refrigerator โ Keeps for up to 5 days, but bring to room temperature before serving for the best texture.
- Freezer โ Freeze for up to 2 months, wrapped individually in plastic wrap and stored in a freezer-safe bag. Thaw overnight before serving.
These are best served slightly chilled or at room temperature. If you are taking them to a party or picnic, they hold up well without refrigeration for a few hours.

Cosmic Brownie Cups
Ingredients
- 100 g (ยฝ cups) Semi-Sweet/Dark Chocolate Melted – chocolate chips work fine!
- 170 g (ยพ cups) Unsalted Butter Melted
- 100 g (ยฝ cups) Light Brown Soft Sugar
- 100 g (ยฝ cups) Granulated Sugar
- 2 (2) Large Free Range Eggs
- 80 g (โ cups) All Purpose Flour
- 30 g (6 tbsp) Cocoa Powder
- Pinch of Salt
For the Ganache
- 220 g (1 ยผ cups) Dark/Semi-Sweet Chocolate Chocolate chips work fine!
- 180 ml (ยพ cups) Heavy Cream
- Cosmic Sprinkles
Instructions
- Pre-heat your oven to 390โ/180โ. Line a 12 hole muffin pan with muffin cases.
- In a small bowl, break up the dark chocolate and melt in the microwave in 20 second intervals, stirring in between to make sure it doesn't burn. Alternatively, set up a double boiler. Do this by placing a heatproof bowl over a small pot of simmering water. Add the chocolate to the heatproof bowl and stir until melted.ย
- In a large mixing bowl, whisk together melted butter and both sugars for several minutes. Add in the eggs, one at a time and mixing in between.ย Add the melted chocolate slowly and combine once again.ย
- Add the flour, salt and cocoa powder, fold gently into the wet mixture with a rubber spatula or wooden spoon until just combined.ย Scoop into the lined muffin pan, no need to worry about filling close to the top, they don't rise much at all.
- Bake 20-23 minutes, until no longer wobbly. While still warm, create the indents by using a teaspoon measure, egg cup or end of a wooden spoon. Press into the middle, leaving tall sides. Let cool.
For the Ganache
- Chop the chocolate up into small pieces if using block chocolate (chocolate chips are fine too). Place the chocolate in a heatproof bowl/jug.
- Heat the cream over a medium heat in a small saucepan. Once it has started simmering, pour it over the chocolate. Leave for 2 minutes, then whisk to create a thick, glossy chocolate ganache. Pour/spoon this over the brownie cups – work quickly, as the ganache will begin to set and then it becomes hard to pour. Use the back of a spoon to neaten up!
- Add the sprinkles, let set for 30 minutes – 1 hour (optional, feel free to eat immediately, but this lets the chocolate ganache firm up). Serve – use a knife to slice in half to get that Instagram filling shot!
