โค๏ธ Why Red Velvet Cookies Are a Valentineโ€™s Day Favorite

Red velvet desserts have become a Valentineโ€™s Day staple, and cookies are one of the easiest ways to enjoy that classic flavor.

  • The red color instantly feels festive and romantic
  • The flavor is lightly chocolatey and not overpowering
  • Red velvet pairs beautifully with sweet candies and white chocolate

Unlike cakes or cupcakes, cookies are easy to share, easy to store, and easy to gift. That makes them ideal for busy February baking.

๐Ÿฐ Why Cake Mix Cookies Work So Well

Using cake mix for cookies might feel unconventional, but it is one of the easiest baking shortcuts around.

Consistent results

Cake mix already contains flour, sugar, cocoa, and leavening agents in the correct ratios, which removes much of the guesswork.

Soft and chewy texture

Cake mix cookies tend to bake up thick with tender centers, especially when slightly underbaked.

Minimal ingredients

Most cake mix cookie recipes require just a few additional ingredients, making them perfect for last minute baking.

For red velvet cookies specifically, cake mix simplifies both the flavor and color, saving time and effort.

INGREDIENTS REQUIRED

There are no specialist ingredients or equipment required for this bake. I can find everything I need at my local supermarket or grocery store. Also, I use a standard large baking tray/cookie sheet. Bake across two pans as the cookies spread while baking

  • Red Velvet Cake Mix (Any brand/variety/flavor)
  • Large Free Range Eggs
  • Vegetable Oil
  • White Chocolate Chips
  • Valentine’s M&Ms (or similar)

๐Ÿ’— Flavor and Texture Expectations

These easy red velvet cake mix cookies are known for a few standout qualities.

  • Soft centers with lightly crisp edges
  • Bright red color that stays vibrant after baking
  • Mild cocoa flavor that complements sweet candy

If you prefer extra soft cookies, pull them from the oven when the centers still look slightly underdone. They will continue to set as they cool.

๐ŸŒธ Easy Variations to Try

Once you master the base recipe, it is easy to customize these cookies.

Holiday swaps

Use different candy colors to adapt these cookies for Christmas, baby showers, or birthdays.

โš ๏ธ Troubleshooting and Common Mistakes

Even easy recipes can run into issues. Here are the most common problems and how to fix them.

Cookies spreading too much

This usually happens if the dough is too warm or the butter or oil measurement is off.

  • Chill the dough for 20 to 30 minutes before baking
  • Use a cookie scoop to keep portions even
  • Avoid greasing the baking sheet too heavily

Cookies turning out dry

Overbaking is the most common cause of dry cake mix cookies.

  • Bake just until the edges are set
  • The centers should still look slightly soft
  • Remember cookies continue baking on the hot pan

Cookies are too soft or fragile

Cake mix cookies can be very tender when warm.

  • Let cookies cool on the baking sheet for several minutes before moving
  • Transfer to a cooling rack once they are set

Candy melting or cracking

Some candies are not designed for baking.

  • Press delicate candies on top halfway through baking instead of mixing them in
  • Use candy coated chocolates for better heat resistance

Color looks dull

Overbaking or using a darker baking sheet can affect the appearance.

  • Use a light colored baking sheet
  • Avoid baking longer than necessary

๐ŸŽ Perfect for Gifting and Sharing

These cookies are ideal for Valentineโ€™s gifting.

  • Package in clear treat bags tied with ribbon
  • Add to cookie boxes with brownies or truffles
  • Serve on dessert boards at Valentineโ€™s or Galentineโ€™s parties
  • Bring to school or office celebrations

Their bold color and festive candy make them eye catching without extra decorating.

๐Ÿง Storage and Make Ahead Tips

These cookies store and freeze beautifully.

Room temperature

Store in an airtight container for up to four days. Adding a slice of bread helps keep them soft.

Freezing baked cookies

Freeze in a single layer, then transfer to a freezer bag for up to two months.

Freezing cookie dough

Scoop dough balls and freeze. Bake from frozen, adding one to two minutes to the bake time.

๐Ÿ’• Helpful Baking Tips

  • Do not overmix the dough
  • Use parchment paper for even baking
  • Press extra candy on top before baking for a bakery style look
  • Rotate the pan halfway through baking if your oven has hot spots

These small adjustments help ensure perfect cookies every time.

STORAGE FOR MY Easy Red Velvet Cake Mix Cookies

When it comes to storing fresh cookies, itโ€™s essential to maintain their texture and flavor. Here are a few tips to help you store your cookies effectively:

  1. Pantry: As these cookies donโ€™t require refrigeration, place them in an airtight container in a cool place like your pantry or cupboard.ย
  2. Freezing:ย Cookies can generally be frozen for up to 3 months. To freeze, arrange them in a single layer on a baking sheet and place in the freezer. Once frozen, transfer them to an airtight container or freezer bag with layers separated by parchment paper. Thaw them at room temperature before serving. Only do this with the dough before baking. Once baked, you can freeze, but not with the frosting!ย

By following these storage methods, you can enjoy your freshly baked cookies for an extended period without compromising on quality.
