๐ฅ English Style Sausage Rolls with Sage
If youโve ever strolled past a bakery window in the U.K., youโve probably seen the golden, flaky goodness that is a sausage roll. These English Style Sausage Rolls with Sage bring that same comfort and flavor right to your kitchen โ buttery puff pastry wrapped around perfectly seasoned sausage filling, baked until golden and crisp.
Theyโre savory, flaky, and satisfyingly hearty. These are a wonderful snack for picnics, tea parties or for holiday parties as a warm appetiser! Whether you serve them for brunch, as a holiday appetizer, or alongside a cup of tea, these sausage rolls are guaranteed to impress. ๐ฌ๐งโจ
As I grew up in the UK, these are a special bake for me. These were a heavy feature in family parties, gatherings, Christmas time and just in general – for snacks, picnics, tea time, the giant ones you can find in bakeries and more. However, since moving to the US, I haven’t found anywhere to buy them so I figured it was time to get into the kitchen and create my own!

๐ง What Are English Style Sausage Rolls?
A sausage roll is a classic British pastry โ think of it as the savory cousin to a croissant or hand pie. At its simplest, itโs seasoned ground sausage wrapped in puff pastry, then baked until beautifully golden. The filling is flavorful but not spicy, and the flaky crust gives the perfect contrast in texture.
Theyโre sold in nearly every bakery, pub, and cafรฉ across England, and theyโre just as popular at holiday gatherings and picnics. For many, theyโre as comforting and iconic as a Sunday roast or a pot of tea.
This version uses sage, one of the most traditional herbs in British cooking, which adds warmth, depth, and a lovely earthy note to the filling.
๐ฟ Why Add Sage?
Sage is the secret ingredient that elevates these sausage rolls from simple to spectacular. ๐ฟ
This aromatic herb has a savory, peppery flavor with just a touch of citrus and pine. It pairs beautifully with pork and gives the rolls that authentic English taste youโd expect from a cozy countryside bakery. Dried sage goes into the pork sausage filling, and then I like to decorate the sausage rolls with fresh sage leaves which crisp in the oven. Of course, make it work with whatever is available to you!
Think Thanksgiving and Christmas time, when we pair sage with stuffing and savory roasted meats – it evokes such gorgeous thoughts of wonderful food and wonderful times of year!
Adding sage makes the sausage filling richer and more complex, perfect for fall and winter gatherings when hearty, herb-filled dishes really shine.
๐ฅง The Inspiration Behind This Recipe
British comfort food is all about simple, flavorful ingredients prepared with care. Thereโs something wonderfully nostalgic about sausage rolls, whether theyโre served warm at a family gathering or grabbed fresh from a bakery counter. These are especially wonderful for me, as I grew up in the UK prior to moving to Texas in my 20s. I love making ‘English’ foods to transport me mentally to home and my upbringing. Sausage rolls are a necessity at most children’s parties and gatherings in the UK, and are so easy to come by in grocery stores and bakeries alike.
This recipe was inspired by the traditional rolls often enjoyed duringย holiday parties,ย pub lunches, andย afternoon teas across the U.K. The addition of sage nods to classic British sausage seasoning, bringing that authentic touch to a homemade version thatโs easy to make and even easier to love.
Imagine buttery pastry, warm sausage, and fragrant herbs coming together in one bite โ itโs pure comfort food bliss.

๐ง Key Ingredients Youโll Need
While weโre not listing the exact recipe, hereโs a breakdown of what makes these sausage rolls so flavorful and satisfying:
- Pork Sausage:ย Choose high-quality ground pork or sausage meat. The flavor of your rolls depends on it, so use something youโd enjoy on its own.
- Sage:ย Fresh or dried sage adds the signature English flavor. A little goes a long way.
- Breadcrumbs:ย Help bind the sausage mixture and keep it tender.
- Egg:ย Used both in the filling (for richness) and brushed on top for that beautiful golden shine.
- Puff Pastry:ย The star of the show! Light, flaky, and buttery. Store-bought works perfectly โ just make sure itโs fully thawed before using.
- Salt and Pepper:ย To season everything to perfection.
Each component plays an important role, and together they create that classic flaky, herby, and savory experience.
๐ฅฃ Tips for Perfect English Sausage Rolls (With Sage & Puff Pastry)
Sausage rolls are wonderfully simple to make, but a few tips can help you get the best flavor and texture every time.
1. Use Cold Pastry
Cold puff pastry puffs up better in the oven. Keep it chilled until youโre ready to assemble your rolls.
2. Donโt Overfill
Itโs tempting to stuff them full of sausage, but too much filling can cause the pastry to burst open. Use just enough for a nice, even roll.
3. Add Sage Gradually
Sage has a strong flavor. Start small and adjust to taste โ especially if using dried sage.
4. Brush with Egg Wash
This gives your rolls that beautiful golden color. Mix one beaten egg with a splash of milk for a shiny, even finish.
5. Chill Before Baking
Once assembled, chill your rolls for 15โ20 minutes before baking. This helps the pastry hold its shape and gives you cleaner edges.

๐ด Serving Ideas
Sausage rolls are incredibly versatile โ they can be enjoyed hot or cold, at breakfast or as a snack. Here are a few serving ideas:
- As an appetizer:ย Cut them into bite-sized pieces and serve with mustard, ketchup, or a tangy chutney.
- For breakfast or brunch:ย Pair with scrambled eggs and roasted tomatoes.
- At parties:ย Serve warm on a platter with dipping sauces.
- With afternoon tea:ย A savory balance to sweet scones and pastries.
Theyโre perfect for holiday spreads, football watch parties, or even packed lunches. Once you make them, youโll understand why theyโre such a British favorite.
๐ฏ Sauces and Dips to Try
A good dip takes sausage rolls to the next level! Try one of these for extra flavor:
- Honey Mustard:ย Sweet and tangy.
- Brown Sauce:ย A British classic โ similar to steak sauce with a fruity twist.
- Spicy Ketchup:ย Add a little kick.
- Apple Chutney:ย Complements the sage and pork beautifully.
- Garlic Aioli:ย For a creamy, indulgent touch.
If youโre serving these at a party, offer a few dips so guests can choose their favorite.

๐ง How to Store and Reheat: English Sausage Rolls (With Sage & Puff Pastry)
One of the best things about sausage rolls is how well they keep.
- Refrigerator:ย Store leftovers in an airtight container for up to 4 days.
- Freezer:ย Freeze unbaked or baked rolls for up to 2 months.
- Reheating:ย Warm in the oven at 350ยฐF for 10โ15 minutes until heated through. Avoid microwaving โ it can make the pastry soggy.
If freezing unbaked rolls, assemble them and freeze on a baking sheet before transferring to a freezer bag. Then bake straight from frozen, adding a few extra minutes to the baking time.
๐ฐ๏ธ Make-Ahead Option
If youโre hosting or meal-prepping, sausage rolls can easily be made ahead.
- Prepare and roll your pastry with filling.
- Cover and refrigerate for up to 24 hours.
- When ready to bake, brush with egg wash and pop them in the oven.
Freshly baked sausage rolls straight from the oven โ no last-minute stress.
๐งโ๐ณ Variations to Try
Once youโve nailed the classic version, you can get creative with flavors!
- Caramelized Onion Sausage Rolls:ย Add sweet caramelized onions for extra richness.
- Apple and Sage Sausage Rolls:ย Add finely diced apple for a hint of sweetness.
- Cheddar-Stuffed Sausage Rolls:ย Mix grated sharp cheddar into the filling.
- Spicy Sausage Rolls:ย Add chili flakes or a dash of cayenne for a fiery twist.
Each variation keeps that cozy English flavor while giving you a fresh take on a classic.

English Style Sausage Rolls with Sage
Ingredients
- 1 Sheet (1 Sheet) Puff Pastry (Store bought, thawed)
- 1 lb (450 g) Breakfast Sausage See Notes
- ยฝ Cup (70 g) Breadcrumbs
- 1 (1) Large Egg
- 1 tbsp (1 tbsp) Dried Sage
- 1 tbsp (1 tbsp) Mustard Powder
- Salt and Pepper
For the Topping
- 1 (1) Large Egg Beaten
- 2 tbsp (2 tbsp) Nigella Seeds/Sesame Seeds
- Fresh Sage Leaves Optional, to decorate
Instructions
- If using traditional sausage links, remove the meat from their casing and discard of the casings.
- Add the sausage meat, breadcrumbs, egg, sage and mustard powder to a bowl with a generous seasoning of salt and pepper. Bring everything together (you can use your hands, or put everything into a food processor).
- Roll out the sheet of puff pastry onto a lined baking tray. Slice in half lengthways.
- Divide the sausage mixture in half. Take one half of this mixture, and create a 'long sausage' along the length of a sheet of puff pastry. Roll the pastry around the sausage and press the pastry together to seal. Slice into 1 inch wide 'rolls'.
- Crimp the edges with a fork to seal the pastry edges. Refrigerate 20 minutes.
Baking
- Preheat the oven to 420โ/210โ. Line another baking tray.
- Working quickly: Place the cold sausage rolls across both baking trays (allowing some space for spreading). Brush with the beaten egg and scatter over some Nigella seeds, sesame seeds, or fresh sage leaves.
- Bake 16-20 minutes – until golden on top! Remove and let cool before eating (although, definitely best eaten when still a little warm).
