Ingredients

  • 100 g (ยฝ cups) Dark/Semi-Sweet Chocolate Melted
  • 170 g (ยพ cups) Unsalted Butter Melted
  • 100 g (ยฝ cups) Light Brown Sugar
  • 100 g (ยฝ cups) Granulated Sugar
  • 2 (2) Large Eggs
  • 2 tsp (2 tsp) Vanilla Extract
  • 80 g (โ…” cups) All Purpose Flour
  • 30 g (6 tbsp) Cocoa Powder

For the Cheesecake Layer

  • 225 g (1 cup) Full Fat Cream Cheese
  • 50 g (ยผ cups) Granulated Sugar
  • 1 (1) Large Egg
  • 2 tsp (2 tsp) Vanilla Extract

For the Pecan Pie Layer

  • 50 g (ยผ cups) Unsalted Butter
  • 100 g (ยฝ cups) Light Brown Soft Sugar
  • 3 tbsp Heavy Cream
  • 120 g (1 ยผ cups) Pecans Chopped

Instructions

  • Preheat oven to 370โ„‰/180โ„ƒ. Line a 8โ€ณ square baking tin with greaseproof paper.ย 
  • Melt the dark/semi-sweet chocolate by breaking up into small pieces in a bowl and heating for 30 second intervals in a microwave, stirring in between. Set aside to cool whilst making the brownies.
    Alternatively, set up a double boiler. Do this by placing a heatproof bowl over a small pot of simmering water. Add the chocolate to the heatproof bowl and stir until melted.ย 
  • In a large bowl or the bowl of a stand mixer combine the melted butter, and both the brown and granulated sugars on a medium speed until fully combined. Add the eggs and vanilla and mix again. Add the melted chocolate.
  • Add in the flour, cocoa powder and fold together. Pour the batter into the prepared pan.

For the Pecan Pie Layer

  • In a saucepan, melt the butter. Then add the cream and brown sugar – stirring to combine. Turn off the heat and add the chopped pecans. Set aside while making the cheesecake layer.

For the Cheesecake Layer

  • Make the cheesecake layer by combining the cream cheese, sugar, egg and vanilla. Pour this over the brownie batter.
  • Now that the pecan layer has cooled a little, pour this over the cheesecake layer.
  • Bake for 33-36 minutes. The cheesecake may look a little wobbly in the center but that is fine – if the whole thing is still wobbly, let it bake a few more minutes. Let cool before slicing and serving.
