So this recipe came out of participation in a bake club, with the theme being ‘Burns Night’ – apt, considering I currently live in Scotland! Burns Night is a celebration of the Scottish poet, Robert Burns and is celebrated with Scottish fare: Haggis, Oatcakes, Whisky and Cranachan (a dessert made with cream, oats and berries!). The first time I made this, I had bread going stale, and a desire for an easy but gorgeous Sunday brunch – the result was this French Toast Bake with Cranachan Streusel Topping!

A couple of tips with this one, use any berries you have (fresh or frozen), and if your bread is stale – even better! It will take up more of the custardy liquid. You will definitely want some cream or ice cream at the ready to cover the bake once it’s out of the oven. Serve straight from the oven and have spoons ready! Also, if you want to make life even easier on your weekend morning, you can prep the bread mixture the night before, leave in the fridge overnight and put straight in the oven in the morning!

French Toast Bake with Cranachan Streusel Topping

Serves: 4
Prep Time: 20 minutes
Cook Time: 60 minutes
Total Time: 1h20m

Ingredients:

  • 3 Eggs
  • 3/4 Cup Milk
  • 1tsp Vanilla Extract
  • 1/4 Cup Sugar
  • 2-3 Cups Bread (Cut into Cubes)
  • 1 1/2 Cups Berries (Fresh or Frozen)

For the Cranachan Streusel Topping:

  • 2tbsp Butter
  • 4tbsp Oats
  • 4tbsp Flour
  • 4tbsp Brown Sugar

Method:

  1. If baking now, preheat oven to 200C/180C Fan/Gas Mark 6.
  2. In a bowl, combine all ingredients – adding the bread last and rubbing in to ensure everything is soaked. If you think the mixture looks a little dry (this will depend on how stale your bread is/the size of the cubes) add more milk – it should look pretty wet!
  3. Pour mixture into a baking dish, I use a 9″ Pyrex Dish (whatever you use, make sure it can withstand the oven heat). At this stage, either prepare your Cranachan Streusel Topping, or if making ahead, cover the dish and chill overnight.
  4. Make the topping by combining butter, oats, flour and sugar and rubbing together with a fork. The mixture should seem fairly dry and crumbly, and doesn’t need to be totally combined. Add the berries, then sprinkle this over the French toast.
  5. Bake for 45mins-1hr – this will depend how crispy you want the top to be!
  6. Remove, and serve immediately with cream/ice cream and maple syrup! (Whisky drams on the side are optional, but highly recommended!).
