Funfetti Frosted Birthday Cake Blondies

Dense and fudgy blondies packed full of white chocolate, topped with a cute pink frosting and sprinkles – there is so much to love with these Funfetti Frosted Birthday Cake Blondies. These are a fabulous treat for any occasion, and travel really well!

I truly love a good blondie. The light brown sugar and melted butter combo gives the best chewy texture that is so comforting. This is a great bake for so many things, but the best for when you need a bit of comfort food. You can easily make the blondie and eat it without the frosting, but it does add a more fun flair!

TIPS FOR THE BEST Funfetti Frosted Birthday Cake Blondies

  • Brown Sugar: This is crucial to the perfect fudgy texture and deep flavour. You could use dark brown soft if you’re really in a pinch. Light brown is definitely your best friend in blondies.
  • Melted Butter: This is what gives the bake that oh so Instagrammable shiny, crisp top. Don’t skip this step!
  • Melted White Chocolate: This gives the bake its richness and sweetness. Be really careful melting the white chocolate as it is prone to burning!
  • Frosting: This recipe creates a good thick layer of frosting. To prevent the buttercream from splitting, make sure your butter (and all other ingredients) are at room temperature. 

For these Funfetti Frosted Birthday Cake Blondies, I use a basic 8′ square pan (I like this one), and recommend using an electric or stand mixer to really combine the butter and sugars (with a mixer like this). Funfetti Frosted Birthday Cake Blondies

Thick fudgy white chocolate and sprinkle filled blondies, topped with a layer of pink frosting and extra sprinkes. Birthday cake/funfetti style – perfect for really anything!

Ingredients

  • 125 g White Chocolate Melted
  • 170 g Unsalted Butter Melted
  • 75 g Light Brown Sugar
  • 125 g Granulated Sugar
  • 2 Medium Free Range Eggs
  • 2 tsp Vanilla Extract
  • 115 g Plain Flour
  • 150 g White Chocolate Chopped

For the Frosting

  • 100 g Unsalted Butter Room Temperature
  • 300 g Icing Sugar
  • 1 tsp Vanilla Extract
  • Milk
  • Pink Food Colour
  • Sprinkles to decorate

Instructions

  • Preheat the oven to 200C/180C Fan/Gas 6. Line an 8 inch square baking tin.
  • In a small bowl, break up the white chocolate and melt in the microwave in 20 second intervals, stirring in between to make sure it doesn’t burn.
  • In a large mixing bowl, whisk together the melted butter and both sugars. Add in the eggs and vanilla extract and mix again.
  • Whisk in the melted white chocolate until fully incorporated. Fold in flour and chopped chocolate. Pour into tin, bake 27-30 minutes. Let cool on a wire rack.

For the Frosting

  • Add the butter and vanilla to a large mixing bowl. Beat with a whisk on high for a minute to soften/combine everything.
  • Add half the icing sugar, whisk on high. Then add the remaining half and whisk everything on high until fluffy. Add icing sugar/milk as required to meet your desired consistency. Spread over the cooled blondies, and optional: top with sprinkles!
