Exactly what you think they are, super simple, made in one bowl, 3 Ingredient Biscoff Cookies. Minimal washing up, no chill time required, these really are everything you could want in a cookie. These err on the crispy side, so if you’re a soft cookie kinda person, I recommend these Copycat Millie’s Cookies instead!

I think it’s fair to say, there is something very special about Biscoff and Biscoff spread especially – how is it so good?! These bring that flavour into an easy cookie. This allows you to spend a Sunday morning creating something that gives a great sense of achievement without too much work! You could definitely add some white chocolate chips to up the game on these, but I think they’re great as they are!

These came about from always loving those old-fashioned American 3 ingredient peanut butter cookies. I love the idea of an easy recipe that can come together with store cupboard staples. If you aren’t already adding jars of this stuff to the weekly shop, I would definitely ask why not!?

These will store in an airtight container for 3-5 days. That said, they will likely be gone much sooner if your household are anything like mine! You could definitely make these much smaller for little people (or if you prefer to have small snacks ready for on-the-go).

3 Ingredient Biscoff Cookies

Makes: 8 Cookies
Prep Time: 10 Minutes
Cook Time: 15 Minutes
Total Time: 25 Minutes

Ingredients

  • 135g Smooth Biscoff Spread (or other Cookie Butter)
  • 150g Granulated Sugar
  • 1 Large Egg

Method

  1. Preheat oven to 180C/160C Fan/Gas 6. Line 2 to 3 large baking trays (depending on how large you want the cookies).
  2. In a bowl, combine the 3 ingredients with an electric whisk on high for a few minutes.
  3. Scoop balls of dough onto the trays, mine are made with about 1/2tbsp scoops, spread at least 3 inches apart.
  4. Bake for 10-12 minutes, until they look crisp at the edges. Remove and let cool on a wire rack.
