These Cinnamon Roll Pop Tarts are a serious treat. Easy shortcrust pastry, filled with a buttery, cinnamon layer and baked. These are then covered in a thick glaze and topped with crushed Cinnamon Cereal (Cinnamon Toast Crunch/Curiously Cinnamon depending on your residence). Lots of sweet cinnamon flavours combine for the ultimate breakfast/brunch/snack.
The pastry is super simple but feel free to use shop bought. The filling comes together in minutes, then a little chill time prior to baking. These are great if you want to make them ahead of time, letting them chill a few hours or overnight. This recipe makes about 8 pop tarts, so feel free to half or double quantities to suit you. These may seem a bit much at first glance, but honestly, they are so dreamy if you are a big cinnamon fan!

Cinnamon Roll Pop Tarts

Total Time: 1 Hour 45 Minutes (Including Chilling)
Ingredients
For the Dough:
- 340g Plain Flour
- 225g Butter, Cold
- 1 Tbsp Granulated Sugar
- 2 Tbsp Ice Cold Water
- Optional: 2 Tbsp Milk (to glaze)
For the Filling:
- 300g Light Brown Sugar
- 3 Tbsp Butter, Softened
- 3 Tbsp Plain Flour
- 2 Tsp Vanilla Extract
- 2 Tbsp Cinnamon
For the Glaze:
- 175g Icing Sugar
- 3 Tbsp Milk
- 1 Tsp Cinnamon
- 1 Tsp Light Brown Sugar
- To Decorate: 30g Cinnamon Cereal
Method
- If making the dough, do so by combining the flour, butter and sugar in a food processor (or using your fingertips in a large bowl) until the mixture resembles breadcrumbs. Add the water until a dough forms.
- Take half the dough and roll to a rectangle approx 25×30 cm. Cut into 8 rectangles. Repeat with the remaining dough.
- Make the filling by combining all ingredients in a small bowl. Scoop large tablespoons of the filling onto half of the dough rectangles.
- Take the rectangles of dough that remain and place on top of the filling. Ensure filling is covered/sealed by the dough. Then use a fork to press the edges of the dough to form a tight seal, and give the classic pop tart look.
- Place these on a large lined baking tray (you may need two) and put in the fridge for at least 1 hour.
- Preheat the oven to 200C/180C Fan/Gas 6. If using, brush some milk over the pastry to make them more golden. Bake the pop tarts for 25-30 mins, until golden brown.
- Let cool on a wire rack before glazing.
- Make the glaze by combining the ingredients then dolloping onto the pop tarts. Cover with crushed cinnamon cereal and serve!
