These Cookie Dough Cheesecake Bars really are a beautiful bake for any dessert lover! A buttery biscuit base gets topped with a creamy cheesecake. Then, this gets covered in a chocolate chip cookie dough. This all gets baked together for something super fun!

Whilst it may appear a lot of steps, it really is a simple bake. While the base is baking, whip up the cheesecake layer in a small bowl, and the cookie dough in a mixing bowl. Everything gets layered and baked together from then! I highly recommend lots of chocolate chips for the best result – but use any type you like!

These need a little time to set up before slicing, like any good cheesecake. So make sure to allow for this if making for an occasion! These do well if making ahead of time, especially overnight! The bars are pretty thick in size, so you might want to slice them smaller than I have!

For these Cookie Dough Cheesecake Bars, I use a basic 8′ square pan (I like this one). I recommend using an electric or stand mixer to really combine the butter and sugars (with a mixer like this). Cookie Dough Cheesecake Bars

Cookie Dough Cheesecake Bars: A biscuit base topped with a layer of cheesecake and chocolate chip cookie dough! Allow time at the end for the bars to chill before slicing!

Ingredients

For the Base

  • 250 g Digestive Biscuits
  • 100 g Melted Butter

For the Cheesecake

  • 250 g Full Fat Cream Cheese
  • 75 g Icing Sugar
  • 1 Medium Egg
  • 1 tsp Vanilla Extract

For the Cookie Dough

  • 70 g Butter Softened
  • 60 g Light Brown Soft Sugar
  • 20 g Granulated Sugar
  • 1 Medium Egg
  • 1 tsp Vanilla Extract
  • 125 g Plain Flour
  • 150 g Chocolate Chips

Instructions

  • Preheat the oven to 200C/180C Fan/Gas 6. Line an 8" square pan.
  • Make the base by crushing the digestive biscuits and mixing with the melted butter. Press down to form an even layer in the pan. Bake 10 minutes.
  • Meanwhile make the cheesecake layer: combine all the ingredients with a spoon in a small bowl until thoroughly combined. Set aside.
  • Make the cookie layer: Beat together the butter and sugar in a large bowl/bowl of a stand mixer on a medium speed for 3-5 minutes. Add in the egg and vanilla and mix again.
  • Add the flour and chocolate chips to the cookie dough mix. Mix until totally combined.
  • Once the base has been baking 10 minutes, remove from the oven and pour over the cream cheese. Then use a spoon to 'dollop' the cookie dough over the cheesecake. Don't worry if it's not a perfect layer – it will spread while baking/cracks look good anyway!
  • Bake for 30-35 minutes, until golden. Let cool, then place in the fridge for 2+ hours before slicing!
