For this Copycat Costa: Vegan Chocolate Tiffin you only need a few simple ingredients and some time to chill in the fridge for an elite bake. This is definitely one to share with friends – vegan or not, they’ll all want some. Feel free to sub out various ingredients for your preferred biscuits/chocolate. Also, if you don’t need it to be vegan, feel free to use normal chocolate and butter, it will still work perfectly

For those who are unsure of what to make of this – tiffin is simply chocolate, biscuits and any other add ins you want. In this recipe I add a layer of melted chocolate and various toppings to make it even better. There is no baking required so you can make this ahead of time and serve once ready.

This Tiffin is a copycat of the Costa Coffee version, in collaboration with the Vegan food legends, BOSH. That is, except without all the additives/preservatives and other unwanted ingredients. Copycat Costa: Vegan Chocolate Tiffin

Copycat Costa: Vegan Chocolate Tiffin (BOSH style)

Makes: 9 Slices (8″ Square Tin)

Ingredients

For the base:

  • 350g Dark Chocolate
  • 75g Vegan Butter
  • 3 Tbsp Golden Syrup
  • 150g Digestive Biscuits, Crushed
  • 100g Raisins

For the Top:

  • 200g Dark Chocolate
  • 40g Oreos, crushed
  • Vegan Fudge Pieces/Vegan Chocolate chips

Method

  1. Line an 8″ square tin.
  2. In a large heatproof bowl, add the chocolate, butter and golden syrup. Set over a pan of simmering water (Bain Marie) and stir until combined and glossy.
  3. Turn off the heat. Add the raisins and crushed biscuits to the melted chocolate mixture and stir until combined.
  4. Pour this mixture into the tin. Push to the sides.
  5. Melt the other 200g dark chocolate in a microwave, checking/stirring at 20 second intervals. Once melted, pour on top of the biscuit base.
  6. Sprinkle over the crushed Oreos/fudge pieces/anything else!
  7. Let set in the fridge for at least an hour (overnight is fine!). Once set, cut with a hot knife for perfectly smooth slices!
