Easy Mini Chocolate Malt Loaf Bars

Jump to Recipe

These Easy Mini Chocolate Malt Loaf Bars came as a surprise to me with their bomb of flavour and ease of making! I had never really thought to make my own malt loaf but WOW am I so glad I did! It is such an easy recipe, that comes together in one bowl.

I make these with a mini loaf tin, but see notes below to make it as a whole loaf! These are definitely best served slightly warmed with a smear of butter! The chocolate chips are a welcome addition to a classic British bake, adding a little glamour to a very traditional thing!

To make these, you start by adding boiling water to the dried fruit and tea bags. It feels a little odd to add teabags into the mixing bowl but you remove them after letting them brew for a few minutes! You’ll want to use a classic English Breakfast tea for best results! The combination of ingredients makes for a tasty snack or afternoon tea treat! If you’re looking for a snack to take on a hike or bike ride, this is a wonderful choice and packs up really easily!

The outcome is a mini, snackable malt loaf – similar to the supermarket packaged ones! They are sticky and full of dried fruit and deep malt flavour. The chocolate chips merge slightly into the texture but add just a pop of chocolate goodness!

Tips for the best Easy Mini Chocolate Malt Loaf Bars

  • Malt Extract – This is essential for malt loaf! You can find it online or in health food stores! Some major supermarkets may carry it too.
  • Tea – Use English Breakfast Tea. Nothing fancy or flavoured here!
  • Dried Fruit – I like to use raisins, but any combination of raisins/sultanas will work!
  • Chocolate Chips – I find milk works best. You could use finely chopped chocolate too if you struggle to find chocolate chips!
  • Omit the Chocolate Altogether – If you just want to make standard malt loaf, omit the chocolate chips and cocoa powder and add 15g more flour.
  • Make one Large Loaf – Change it up by pouring all the batter into a lined 2lb loaf tin. You’ll need to bake for a good hour!

For these Easy Mini Chocolate Malt Loaf Bars, I use a mini loaf tin. I also recommend a good stand mixer or high speed mixer (like this one). For another mini loaf tin recipe, try these Chocolate Chip Cake Bars or these Lemon Drizzle Loaves. For videos, check my Instagram

Ingredients

  • 180 g Dried Raisins
  • 2 English Breakfast Tea Bags
  • 125 g Malt Extract
  • 100 ml Boiling Water
  • 2 Medium Free Range Eggs
  • 85 g Dark Muscovado Sugar
  • 170 g Plain Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 2 tbsp Cocoa Powder
  • 100 g Chocolate Chips

Instructions

  • Line a 10 hole mini loaf tin (see notes for one 2lb loaf tin). Preheat the oven to 150c/130c fan/gas 2.
  • In a large bowl, add the raisins, tea bags, malt extract and boiling water. Stir and let brew for 5 minutes. Remove the tea bags and dispose.
  • To the raisin/water/malt mixture, add the eggs and sugar and stir to combine.
  • Add the flour, cocoa powder, baking powder and baking soda and mix together until totally combined. Add the chocolate chips and stir for the last time! The mixture should be fairly 'sticky' but cake-batter-like.
  • Use a spoon to add mixture to the prepared tin, filling each hole to an equal level. Bake for approx 30 minutes – until dark brown and a skewer inserted comes out clean. Brush over a little more malt extract for that shiny look and let cool on a wire rack. Serve with some salted butter!
