This Easy Rough Puff Pastry Recipe really is just that: super easy and pretty quick. You just need flour, butter and a little water. You can use vegan block butter to make it vegan. I use this rough puff when I want a puff pastry, it is so much easier to make and is very similar to the real thing.

Easy Rough Puff Pastry Recipe

Makes: About 350g Block
Prep Time: 15 Minutes
Total Time: 55 Minutes (including chill time)

Ingredients

  • 125g Butter, Cold, Cubed
  • 125g Plain Flour
  • 75ml Water, Cold

Method

  1. Add the flour and butter to a large bowl and rub together with your fingertips until roughly combined. You do not want to take it as far as breadcrumbs, there should still be bits of butter visible in places. Add the water and make into a ball (if too dry, add up to 25ml more water).
  2. Wrap in cling film and chill for 20 minutes.
  3. Remove from the fridge, roll in one direction to form a long rectangle. Fold the top edge down to just below the middle. Then fold the bottom edge over this, to form a square with 3 layers (book end). Rotate this block 90 Degrees and repeat. Wrap and chill for another 20 minutes
  4. At this stage, either use the dough for your recipe or feel free to leave in the fridge for longer (up to 1 day) until you need it!
