Honeycomb, Cinder Toffee, whatever you call it, this Honeycomb Recipe has you covered. Make slightly ahead of when you need it, as it requires about an hour to set before you get the joy of smashing it. Have your baking soda measured, pan lined and ready to go, and beware of the hot sugar!

Easy Honeycomb Recipe
Prep Time: 5 Minutes
Total Time: 1 Hour (to allow it to set)
Ingredients
- 100g Granulated Sugar
- 50g Golden Syrup
- 1 Tsp Baking Soda
Method
- Line a large baking tray with baking paper. Measure the baking soda ready to ‘shoot’ into the mix.
- In a medium saucepan, over a gentle heat, combine the sugar and golden syrup. Stir with a wooden spoon as it melts, then turn the heat up to a medium heat. Let the mixture come to an amber colour (about 1-2 minutes).
- Turn the heat off. Add the baking soda in one go and stir vigorously. Once all combined, quickly pour onto the baking tray.
- Leave for about 1 hour, then crack apart!
I have almost made this a few times but I have one fear: How to you clean the pot you make it in? does the candy mixture not set like a rock in it? I had a bad experience with toffee on, ha ha! Many thanks for the small-batch recipe and good instructions, tho.
Hey Stephanie! Thanks for your comment! So there are two options depending on how “stuck” the sugar is. Let the pot cool and see how much comes away when you simply add cold water (if it’s non stick, lots should slide off). If that doesn’t work, fill the pot with
water and let it boil, this will bring the sugar off the pot. Then pour this out and clean as you normally would!
