Zesty Key Lime Pie Blondies: The perfect easy treat for lovers of the zesty, lime-y classic, but wanting to change it up a little! This recipe is super simple and a great way to get those creamy lime vibes in a different form. If you’ve ever wondered how to make key lime pie, but with a twist or something new: this is it.

The lime works well with white chocolate, and with the fudgy blondies. Overall, you can expect a fairly decadent dessert, but with enough lightness from the fresh lime! You can omit the condensed milk in the creamy topping. I buy it in the squeeze bottles so that I can use as little/as much as I like in recipes, but I know these can be hard to come by for some people!

To really nail the blondie texture, you want to make sure your butter is fully melted and that you’re using both white and light brown sugars. This results in top tier fudginess. Not only that, but do give everything a really good mix up until the point of adding the flour and mix ins, then only gently fold it all together. The blondies may sink a little after baking but this is normal and also contributes to the perfect texture.

TIPS FOR TOP TIER Key Lime Pie Blondies

  • Butter: Make sure your butter is fully melted – this gives that shiny top and dense texture
  • Sugars: Both brown and white sugars are needed for the best texture and flavour. The light brown sugar is what makes them squidgy and dense.
  • Fruit: 1 fresh lime is all you need. The zest is what gives real zing, whilst the juice just adds the underlying citrus flavour.
  • Bake Time: These will need a good 30 minutes, and may look a little wobbly, but the cheesecake will set whilst cooling.

For these Zesty Key Lime Pie Blondies, I use a basic 8′ square pan (I like this one), and recommend using an electric or stand mixer to really combine the butter and sugars (with a mixer like this). Ingredients

  • 165 g Butter Melted
  • 150 g Light Brown Sugar
  • 130 g Granulated Sugar
  • 1 Medium Egg
  • 1 Egg Yolk
  • 220 g Plain Flour
  • 1 tsp Baking Powder
  • 1/2 Lime Zest and Juice
  • 150 g White Chocolate Chopped (Optional)

For the Topping

  • 125 g Full Fat Cream Cheese
  • 1 Medium Egg
  • 50 g Granulated Sugar
  • 3 tbsp Sweetened Condensed Milk Optional, see notes
  • 1/2 Lime Zest and Juice

Instructions

  • Preheat the oven to 200C/180C Fan/Gas 6. Line an 8 inch square baking tin.
  • Combine the melted butter, granulated sugar and light brown sugar in a large mixing bowl or the bowl of a stand mixer. Combine on high speed for 3-5 minutes.
  • Add the eggs and vanilla and combine again. 
  • Fold in the flour, baking powder, lime zest, a little lime juice and white chocolate chunks, using a wooden spoon/silicone spatula. Pour this mixture into the lined tin and spread out evenly.
  • In a separate bowl, combine the cream cheese, sugar, egg, the condensed milk (if using) and the remaining lime juice and zest. Pour this over the blondie. Bake for 30-35 minutes. The cheesecake/pie layer may appear a little wobbly – a little is okay, if it looks VERY wobbly give it another 5 minutes. Let cool for at least 1-2 hours before slicing and serving!
