Mince Pie Bars with Streusel Topping – A one tin bake to change up a classic individual mince pie into a whole ‘traybake’. This is fabulous for smaller or larger portions than the classic, and looks great served after dinner or as a cosy movie night snack! No mixer and only a few ingredients are needed for this bake.

Personally, I often find mince pies to be too large or too small, and with a ratio of pastry to mince that I wouldn’t choose! This bake finds a great middle ground. Meaning you can slice them up how you like and the distribution of mince is much more to my liking. The crumbly, streusel topping adds a nice texture contrast so there isn’t too much pastry, and gives cosy apple crumble vibes! The streusel is the only part that requires any work on your side, resulting in something so easy but still feels homemade and much better than store-bought!

Use store bough shortcrust/pie pastry with store bought mincemeat for a truly easy bake. These bars can be rustled up in no time. Delicious served warm with ice cream/custard, or great eaten with hands as snack whilst watching festive movies! Dust with icing sugar for that real Christmas feel.

Tips for the best Mince Pie Bars with Streusel Topping

  • Pastry: Use the recipe for homemade shortcrust pastry or simply buy a pack from the store. The bake will be delicious either way! No pre-bake needed so a really quick recipe!
  • Mincemeat: Use store bought! I prefer the ‘fancy’ varieties so they taste more special, but use whatever you like!
  • Streusel: Made of butter, oats and sugar. Add nuts if desired. Brown sugar is definitely preferable as it adds more depth but caster/granulated will work. Make sure your butter is room temperature.
  • Layering: Spread the mincemeat into a really even layer before crumbling over the streusel.
  • Serving: Dust with icing sugar before serving. Delicious warm or cold!

Ingredients

For the Shortcrust Pastry (or use 350g store bought)

  • 220 g Plain Flour
  • 100 g Unsalted Butter Cold & Cubed
  • 6 tbsp Cold Water

For the Filling

  • 400-500 g Mincemeat See notes

For the Streusel

  • 2 tbsp Butter
  • 4 tbs Plain Flour
  • 4 tbsp Light Brown Soft Sugar
  • 4 tbsp Rolled Oats

Instructions

  • Preheat the oven to 180C/160C Fan/Gas 5. Line an 8" square baking tray.
  • If making your own, make the pastry. Combine the butter and flour, either using your fingers to 'rub together' or by placing in a food processor and combining until the mixture resembles breadcrumbs. 
  • Add the water until the mixture comes together to form a ball. Chill 10 mins in the fridge while the oven gets hot. 
  • In a bowl, combine all the streusel ingredients using a fork to form a sand-like texture.
  • Roll the pastry on a lightly floured surface to about 1/2 inch thick. Place into the lined tin, pushing into all the corners. Spread over the mincemeat in an even layer. Sprinkle over the streusel topping.
  • Bake for 15-20 minutes, until the pastry and streusel are crisp and golden. Remove and serve warm with ice cream or let cool!
