No Bake Cookie Dough Truffles 2 Ways – Milk Chocolate & Funfetti

These No Bake Cookie Dough Truffles are so easy to make, only require a few ingredients and make a GREAT weekend bake that you can get the whole family involved in. In this recipe, I divide the mixture at halfway to create two variants. You could do this, or you could do them all as one flavour (just double the quantity of add-ins/melted chocolate as appropriate).

These truffles are a great snack, perfect to grab and go or have on the side for when that 3pm desire for sugar hits. They are a fab little treat to gift to friends or put on your Insta – v photogenic but so easy. When making these for myself, I won’t always toast the flour first but I do suggest doing so if you’re making these for the small humans or anyone with a sensitive stomach.

As with so many of my recipes, feel free to play around with the mix-ins. Dried fruit, other chocolate, nuts, candy bars etc will all work. These can be decorated with sprinkles, chocolate, edible glitter, or anything you like. As I said – a great one for little people as they can be really fun, if a little messy.

No Bake Cookie Dough Truffles 2 Ways – Milk Chocolate & Funfetti

Makes: About 16
Prep Time: 20 Minutes
Chill Time: 2 Hours
Total Time: 2 Hours 20 Minutes

Ingredients

  • 100g Granulated Sugar
  • 50g Light Brown Sugar
  • 100g Butter
  • 130g Plain Flour
  • 1.5 Tsp Vanilla Extract

For the Mix Ins:

  • 30g Sprinkles
  • 65g Milk Chocolate

To decorate:

  • 100g White Chocolate
  • 100g Milk Chocolate

Method

  1. If doing so ‘cook’ your flour in the microwave. Place full amount in a microwave safe bowl and heat for 20 second intervals until hot throughout.
  2. In a large bowl/the bowl of a stand mixer, combine the butter and both sugars on a medium/high speed until fully creamed together.
  3. Add the flour and vanilla and combine again.
  4. Divide dough into approx. half. To one half, add the chocolate chips and to the other, the funfetti sprinkles.
  5. Use a tsp to scoop the dough, roll in your hands to form a ball then place on a lined baking tray. Chill for 1 hour in the fridge.
  6. After an hour, melt the milk chocolate in the microwave in 20 second intervals. Use a fork/spoon to dip the choc chip cookie dough balls, cover and place back on the tray. Repeat with the white chocolate for the funfetti version. If not planning on drizzling more chocolate, add decorations now. Chill 1 hour in the fridge.
