No baking required for this Peppermint Chocolate Slice (No Bake). Simply layer up a chocolate biscuit base (just like cheesecake), a minty icing layer and some melted chocolate on top. The result is an easy, no bake traybake that tastes fantastic. The contrast of each layer really lends itself to being something nostalgic yet just a bit grown up!

This is a perfect bake for all the family to get involved with, really limited equipment or knowledge needed. Simply pick up the ingredients, have some fun and let chill before slicing! This recipe creates enough to fill an 8×8″ square tin. Feel free to double, and definitely feel free to slice differently. I cut into 9 but this may be too large for children!

I know that mint chocolate recipes can be quite divisive, so I tend to err towards making the mint a touch lighter than some. That said, you really can’t miss it in this recipe! I love an easy, no bake treat, so this fits the bill if you want to make something in advance. This is great for bake sales, to take to school or work.

The filling itself comprises icing sugar, water, peppermint extract and some food colouring. You can up the amount of food colouring to suit yourself. Take care to mix pretty slowly at first to prevent the icing sugar from making too much of a mess. Also, this is really thick to spread, so some patience is needed!

The base is made of basic digestive biscuits and a few other items. You could sub for a similar biscuit, but try to keep it as basic/tasteless as possible! Anything like a Biscoff might clash too much with the mint.

Tips for the best Peppermint Chocolate Slice (No Bake)

  • Biscuit Base: Crush your biscuits really fine. I recommend cheap digestives for best results. You could use a rolling pin or food processor.
  • Icing Middle: Use a gel food colour for a really vibrant shade of green. You will want a nice, deep bowl when stirring this together as icing sugar is likely to make a real mess!
  • Slicing: Keep the tray in the fridge until about 10 mins before wanting to slice. Run your knife under hot water before slicing to avoid cracking!

Ingredients

For the Base

  • 200 g Digestive Biscuits
  • 110 g Unsalted Butter Melted
  • 50 g Dark Chocolate Melted
  • 1 tbsp Cocoa Powder
  • 1 tbsp Granulated Sugar

For the Filling

  • 350 g Icing Sugar
  • 2 tsp Peppermint Extract
  • Green Food Colour
  • Hot Water

For the Topping

  • 200 g Dark Chocolate Melted

Instructions

  • Line an 8" square tin.
  • Start by crushing the biscuits. You could use a rolling pin or food processor. Add in the melted butter, melted chocolate, cocoa powder and sugar and stir to combine. Press into the lined tin and put in the fridge whilst making the filling.
  • Make the filling by combining the icing sugar, peppermint extract, green colour (just a drop, then add until you reach your desired shade) and about 80-90ml hot water. Stir together in a deep bowl (to avoid mess). The mixture should be thick but *just* spreadable. If too thick, add more water, a teaspoon at a time!
  • Spread over the base and set aside.
  • Melt the chocolate in a bowl in the microwave, in 20 second intervals. Pour over the mint layer and spread evenly. Place this in the fridge for at least an hour to totally set. Then, remove, let sit for 10 mins before slicing! (See notes for more tips on clean slices).
