Piri Piri Spiced Focaccia

This Piri Piri Spiced Focaccia is a soft and fluffy bread, covered in Piri piri spices, olive oil and sweet roquito peppers. These are easily found in large supermarkets, but any kind of jarred peppers in oil will work! The recipe is a simple focaccia dough with minimal kneading required.

As with any focaccia, the trick for perfection is ensuring the dough gets a good prove, lots of good quality olive oil and a solid bake. Otherwise, this is foolproof! You could use this for sandwiches, or serve up alongside a Piri piri meal of grilled chicken/halloumi. This is one of those breads that is great for many things, can be frozen and if you have any leftover, makes for fabulous croutons!

Piri Piri Spiced Focaccia

Piri Piri Spiced Focaccia

Makes: 9×13″ tray (about 8 servings)
Prep Time: 30 Minutes
Bake Time: 20 Minutes
Total Time: 2 Hrs 35 Minutes (including proving time)

Ingredients

  • 500g White Bread Flour
  • 1 x 7g Dried Instant Yeast Sachet
  • 3 Tsp Salt
  • 7 Tbsp Olive Oil
  • 2 Tsp Piri Piri Seasoning
  • 100g Sweet Peppers (in oil)/Roast Pepper Antipasti, Chopped

Method

  1. In a large bowl, or the bowl of a stand mixer with the dough hook attachment, combine the flour, yeast, salt, 3 tbsp olive oil and about 350ml warm water. Bring together until a dough forms. You may need to add up to 50ml more water. It should be sticky, but not too wet.
  2. If using a stand mixer, let this knead on medium speed for 5 minutes. If not, pour the dough onto a floured work surface and knead for 8-10 minutes. Grease a bowl with a little olive oil, place the dough in the bowl and let rise in a warm place for 1 hour (until doubled in size).
  3. Lightly grease a 9×13″ tin, tip the dough into it, spread to the edges. Then let rise again for 30-45 minutes.
  4. Preheat the oven to 220C/200C Fan/Gas 6.
  5. Sprinkle 2 tbsp olive oil and 2 tbsp water over the dough, as well as the spice and chopped peppers. Use your fingertips to press into the dough, making indentations all over.
  6. Bake for 20-25 minutes, until golden and smelling amazing! Remove, drizzle a little more olive oil whilst still warm. Let cool on a wire rack and serve with some Piri piri sauce, or alongside a BBQ feast!
