If you’ve been looking for the perfectly fudgey, no nonsense Vegan Brownie recipe – look no further. All you need is plant based butter and milk – no weird ingredients that require hunting in your local supermarket. These have the perfect fudgey texture, with a hint of sesame umami thanks to a swirl of tahini on top. They feel a little more grown up than the classic brownie but by no means lack as a result!
Feel free to change up the mix-ins. You could use nuts, seeds, various vegan chocolate bars, berries or whatever nut butter you’re digging right now. These are perfectly decadent, but not so rich that you won’t be sneaking in a second piece.
Notes:
– Butter: Use any plant based butter that you like, but make sure to melt it before using to provide that perfectly shiny/crispy top!
– Milk: As above, any plant based milk will work, but a sweetened one is preferable!
– Add Ins: Feel free to use anything you like to stir into the brownie batter, and feel free to increase the quantity!
Vegan Brownies with Tahini Swirl

Ingredients
– 1/2 Cup Melted Vegan Butter
– 1 Cup Granulated Sugar
– 1/2 Cup Light Brown Sugar
– 1/2 Cup Vegan Milk
– 2tsp Vanilla Extract
– 1 Cup Plain Flour
– 1/2tsp Baking Powder
– 1/2 Cup Cocoa Powder
– Pinch of Salt
– 1 Cup Chopped Chocolate
– 2tbsp Tahini
Method
- Preheat the oven to 200C/180C Fan/Gas Mark 6. Line an 8″ Square Tin.
- In a large bowl, and using an electric or stand mixer, mix the melted butter (it should still be hot/warm) with both sugars until entirely combined.
- Add the milk and vanilla extract and mix again.
- Add the flour, baking powder, cocoa powder and salt. Fold together using a wooden spoon or rubber spatula. Fold until just incorporated before adding chopped chocolate (or any other mix ins that you like – see note!).
- Pour the batter into the prepared pan. With a tablespoon, scoop some tahini and ‘sprinkle’ over the batter. Swirl into the mixture with a knife before baking.
- Bake for 25-30 minutes. Check that it is no longer ‘wobbling’ in the centre, if it is, it may need a further 5 minutes.
- Remove from the oven and let cool on a wire rack before cutting.
