They are comprised of a shortbread base and topping, giving off berry crumble vibes but much easier to divide and eat on the go! <\/p>\n\n\n\n<p class=\"has-medium-font-size\">These bars are perfect warm, as they are or topped with ice cream, but they are equally great eaten cold as an on-the-go breakfast or snack! If using frozen, I&#8217;d suggest letting them thaw a little before using, just to make life easier &#8211; alternatively just throw them into the microwave for 30seconds &#8211; 1 minute prior to use! <\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"1002\" src=\"https:\/\/tasting-thyme.com\/staging\/6788\/wp-content\/uploads\/2021\/01\/IMG_1764-1024x1002.jpg\" alt=\"\" class=\"wp-image-116\" srcset=\"https:\/\/tasting-thyme.com\/staging\/6788\/wp-content\/uploads\/2021\/01\/IMG_1764-1024x1002.jpg 1024w, https:\/\/tasting-thyme.com\/staging\/6788\/wp-content\/uploads\/2021\/01\/IMG_1764-300x294.jpg 300w, https:\/\/tasting-thyme.com\/staging\/6788\/wp-content\/uploads\/2021\/01\/IMG_1764-768x752.jpg 768w, https:\/\/tasting-thyme.com\/staging\/6788\/wp-content\/uploads\/2021\/01\/IMG_1764.jpg 1169w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Very Berry Crumble Bars<\/h2>\n\n\n\n<p class=\"has-medium-font-size\">Serves: 9<br>Prep Time: 15 minutes<br>Bake Time: 40 minutes<br>Total Time: 55 minutes<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Ingredients:<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>220g Granulated Sugar<\/li><li>125g Plain Flour<\/li><li>1 tsp Baking Powder<\/li><li>1 tbsp Lemon Zest<\/li><li>Salt<\/li><li>110g Butter (softened)<\/li><li>1 Egg <\/li><li>1 tsp Vanilla Extract<\/li><li>1\/4 Cup Flaked Almonds (Optional)<\/li><\/ul>\n\n\n\n<p>For the Filling:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>4 Cups Berries <\/li><li>100g Granulated Sugar<\/li><li>4 tsp Cornflour<\/li><li>1 tbsp Lemon Juice<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Method:<\/h4>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 190C\/180C Fan\/Gas Mark 6. Line a 9&#215;13&#8243; rectangular pan with greaseproof paper.<\/li><li>In a large bowl, combine the sugar, flour, baking powder and salt. Add in the butter, egg and the vanilla extract. Rub together to resemble breadcrumbs. Press 2\/3rds of this mixture into the lined pan, pressing down with the back of a large spoon or a mug to ensure it is all compressed.<\/li><li>In another bowl, combine the filling ingredients (berries, sugar, cornflour and lemon juice). Spoon this on top of the base and spread out, before sprinkling over the remaining crumble\/shortbread mixture on top. Add the flaked almonds, if using, then bake for 35-40 minutes, until golden brown.<\/li><li>Remove the pan from the oven and let cool before cutting into portions.
