Fudgy brownies get topped with a simple Biscoff cheesecake topping. Swirl the topping, then bake! I use an individual brownie pan in the photos for this recipe, but the same recipe applies for a regular 8&#8243; square pan. <\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">For the brownie layer, the recipe relies heavily on the melted butter and light brown sugar to give the fudgy texture. For the cheesecake topping, make a basic mixture using cream cheese and Biscoff and pour it over the brownies. Then, swirl together for the picture perfect finish. <\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">This is a fantastic topping for these brownies, creating a creamy\/fudgy flavour and texture contrast! It gives baked cheesecake vibes without all the hassle. You could use dark brown soft if you\u2019re really in a pinch. Light brown is definitely your best friend in brownies.<\/li>\n\n\n\n<li>Melted Butter: This is what gives brownies that Instagrammable shiny, crisp top. Plus, it gives that deep fudgy texture. Don\u2019t skip this step!<\/li>\n\n\n\n<li>Cheesecake: Combine this in a small bowl. Full fat cream cheese works best (of course) and use granulated\/caster sugar. To swirl, use a chopstick or a knife!<\/li>\n\n\n\n<li>Biscoff: Otherwise known as cookie butter, or speculoos butter. This can be found in most supermarkets in the UK\/US\/Australia\/NZ (and Amazon). Opt for the smooth variety. <\/li>\n\n\n\n<li>Cocoa Powder: As this is a key component, I do recommend a decent quality cocoa powder \u2013 but don\u2019t stress if you don\u2019t have any!<\/li>\n\n\n\n<li>Bake Time: If using an individual brownie tin, the bake time is less than a traditional square tin.<\/li>\n<\/ul>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">For my Peanut Butter Cheesecake Brownies, I use a &#8216;brownie tin&#8217;, but you can also use a basic 8\u2032 square pan (<a href=\"https:\/\/amzn.to\/2TmR6SP\" target=\"_blank\" rel=\"noreferrer noopener\">I like this one<\/a>) without adjusting the recipe, apart from the bake time. I recommend a good stand mixer or high speed mixer (<a href=\"https:\/\/www.amazon.co.uk\/gp\/product\/B0828CKSFC\/ref=as_li_tl?ie=UTF8&amp;camp=1634&amp;creative=6738&amp;creativeASIN=B0828CKSFC&amp;linkCode=as2&amp;tag=tastingthyme-21&amp;linkId=05d2d347849771648718dbec6b6db060\" target=\"_blank\" rel=\"noreferrer noopener\">like this one<\/a>) to make the brownies.
