This Copycat Costa Apple Crumble Flapjack is the perfect treat – it is full of sticky oats, topped with caramelised apples and a crisp crumble topping. These are delicious warm, but keep well and are a great ‘grab and go’ snack. Flapjacks are one of my all time favourite bakes, they remind me of growing up – my mum used to make flapjack regularly. <\/p>\n\n\n\n

If you are based in the US (or anywhere but the UK\/Aus) you can sub golden syrup for light corn syrup or molasses. Even if you’ve never heard of Costa, these are still an awesome treat. They come together pretty quickly, can be topped with a dusting of icing sugar and you’re good to go! <\/p>\n\n\n\n

To make these gluten free, use GF oats. For vegan, just ensure that your butter is vegan. These are a great option if you have to cater to lots of dietary requirements – being egg, flour and dairy free. Feel free to change up the topping by adding dried fruit or nuts – but I think these are great just as they are.<\/p>\n\n\n\n

Copycat Costa Apple Crumble Flapjack (VG)<\/h2>\n\n\n\n

Makes: 8 Slices (8″ Square tin)
Prep Time: 10 Minutes
Bake Time: 25 Minutes
Total Time: 35 Minutes<\/p>\n\n\n\n

Ingredients<\/h3>\n\n\n\n
  • 2 Large Apples (any variety)<\/li>
  • 50g Light Brown Sugar<\/li>
  • 1 Tsp Cinnamon<\/li>
  • 100ml Water<\/li>
  • 125g Butter<\/li>
  • 125g Light Brown Sugar<\/li>
  • 3 Tbsp Golden Syrup (See Notes)<\/li>
  • 250g Oats<\/li>
  • 4 Tbsp Plain Flour<\/li>
  • 4 Tbsp Oats<\/li>
  • 2 Tbsp Butter<\/li>
  • 4 Tbsp Light Brown Sugar<\/li><\/ul>\n\n\n\n

    Method<\/h3>\n\n\n\n
    1. Preheat the oven to 200C\/180C Fan\/Gas 6. Line an 8\u2033 Square baking tin.<\/li>
    2. Chop the apples to a fine dice, add to a saucepan on medium heat with the brown sugar, cinnamon and water. Let simmer (stirring regularly) to let the apples stew. <\/li>
    3. Meanwhile, in another small saucepan combine the butter, brown sugar and golden syrup and heat on low until the butter has melted. Turn off the heat and stir in the oats.<\/li>
    4. Pour the oaty mixture into the baking tin and press down. Spread the stewed apples on top (check they are soft, and that the water has mostly evaporated). <\/li>
    5. In a small bowl, combine the crumble mix (flour, oats, butter and brown sugar). It should be the texture of sand. Sprinkle this over the apples so everything is covered.<\/li>
    6. Bake for 20-25 minutes until golden brown. <\/li>
    7. Let cool on a wire rack before slicing and serving!<\/li><\/ol>\n\n\n\n
