These Cinnamon Roll Pop Tarts are a serious treat. Easy shortcrust pastry, filled with a buttery, cinnamon layer and baked. These are then covered in a thick glaze and topped with crushed Cinnamon Cereal (Cinnamon Toast Crunch\/Curiously Cinnamon depending on your residence). Lots of sweet cinnamon flavours combine for the ultimate breakfast\/brunch\/snack.<\/p>\n\n\n\n

The pastry is super simple but feel free to use shop bought. The filling comes together in minutes, then a little chill time prior to baking. These are great if you want to make them ahead of time, letting them chill a few hours or overnight. This recipe makes about 8 pop tarts, so feel free to half or double quantities to suit you. These may seem a bit much at first glance, but honestly, they are so dreamy if you are a big cinnamon fan! <\/p>\n\n\n\n

Cinnamon Roll Pop Tarts<\/h2>\n\n\n\n

Makes: 8
Prep Time: 30 Minutes
Bake Time: 15 Minutes
Total Time: 1 Hour 45 Minutes (Including Chilling)<\/p>\n\n\n\n

Ingredients<\/h3>\n\n\n\n

For the Dough:<\/p>\n\n\n\n

  • 340g Plain Flour<\/li>
  • 225g Butter, Cold<\/li>
  • 1 Tbsp Granulated Sugar<\/li>
  • 2 Tbsp Ice Cold Water<\/li>
  • Optional: 2 Tbsp Milk (to glaze)<\/li><\/ul>\n\n\n\n

    For the Filling:<\/p>\n\n\n\n

    • 300g Light Brown Sugar<\/li>
    • 3 Tbsp Butter, Softened<\/li>
    • 3 Tbsp Plain Flour<\/li>
    • 2 Tsp Vanilla Extract<\/li>
    • 2 Tbsp Cinnamon<\/li><\/ul>\n\n\n\n

      For the Glaze:<\/p>\n\n\n\n

      • 175g Icing Sugar<\/li>
      • 3 Tbsp Milk<\/li>
      • 1 Tsp Cinnamon<\/li>
      • 1 Tsp Light Brown Sugar<\/li>
      • To Decorate: 30g Cinnamon Cereal <\/li><\/ul>\n\n\n\n

        Method<\/h3>\n\n\n\n
        1. If making the dough, do so by combining the flour, butter and sugar in a food processor (or using your fingertips in a large bowl) until the mixture resembles breadcrumbs. Add the water until a dough forms.<\/li>
        2. Take half the dough and roll to a rectangle approx 25×30 cm. Cut into 8 rectangles. Repeat with the remaining dough.<\/li>
        3. Make the filling by combining all ingredients in a small bowl. Scoop large tablespoons of the filling onto half of the dough rectangles. <\/li>
        4. Take the rectangles of dough that remain and place on top of the filling. Ensure filling is covered\/sealed by the dough. Then use a fork to press the edges of the dough to form a tight seal, and give the classic pop tart look.<\/li>
        5. Place these on a large lined baking tray (you may need two) and put in the fridge for at least 1 hour. <\/li>
        6. Preheat the oven to 200C\/180C Fan\/Gas 6. If using, brush some milk over the pastry to make them more golden. Bake the pop tarts for 25-30 mins, until golden brown.<\/li>
        7. Let cool on a wire rack before glazing.<\/li>
        8. Make the glaze by combining the ingredients then dolloping onto the pop tarts. Cover with crushed cinnamon cereal and serve!<\/li><\/ol>\n\n\n\n
