To kick this off, these White Chocolate and Honey Brownies are not blondies. These are brownies like you know it – chocolatey, fudgy, chewy and with a crisp top, but with white chocolate rather than dark chocolate forming the base. I add in some honey and chocolate chips to make a gorgeous treat that is a real change from the classic.<\/p>\n\n\n\n

I recommend using a good quality white chocolate, as you really want to taste it. The honey makes these extra fudgy, chewy and adds a layer of complexity to the flavour. You could omit, or sub maple syrup or similar if you want, but I think the honey adds a really exciting flavour.<\/p>\n\n\n\n

White Chocolate and Honey Brownies<\/h2>\n\n\n\n

Makes: 9 Squares (8″ square tin)
Prep Time: 10 Minutes
Bake Time: 30 Minutes
Total Time: 40 Minutes<\/p>\n\n\n\n

Ingredients<\/h3>\n\n\n\n
  • 125g White Chocolate, Melted<\/li>
  • 75g Light Brown Sugar<\/li>
  • 125g Granulated Sugar<\/li>
  • 170g Butter, Melted<\/li>
  • 2 Medium Eggs<\/li>
  • 1.5 Tsp Vanilla Extract<\/li>
  • 2 Tbsp Honey<\/li>
  • 110g Plain Flour<\/li>
  • 150g Milk Chocolate, Chopped<\/li><\/ul>\n\n\n\n

    Method<\/h3>\n\n\n\n
    1. Pre-heat your oven to 200C\/180C Fan\/Gas Mark 6. Line an 8\u2033 Square Pan with greaseproof paper.<\/li>
    2. In a small bowl, break up the white chocolate and melt in the microwave in 20 second intervals, stirring in between to make sure it doesn\u2019t burn.<\/li>
    3. In a large mixing bowl, whisk together the melted butter and both sugars. With an electric\/stand mixer, go for a solid 3-5minutes so it is totally combined. Add in the eggs, one at a time and mixing in between. Add the vanilla and honey and mix again.<\/li>
    4. Now, add the melted chocolate slowly (check it first, to make sure it isn\u2019t so hot that it will cook the eggs) and combine once again.\u00a0<\/li>
    5. Add the flour and fold gently into the wet mixture with a rubber spatula or wooden spoon until just combined. Fold in the chopped milk chocolate (chocolate chips are fine).<\/li>
    6. Pour the batter into the lined pan and bake approx 25m-30 minutes. <\/li>
    7. Remove pan from oven once cooked, and leave the brownies in the pan on a wire rack until totally cooled. Slice and serve! <\/li><\/ol>\n\n\n\n
