These Mini Cinnamon Roll Cookies are the cutest little cookie you’ll ever make. A simple shortbread cookie, rolled with a filling of butter, cinnamon and sugar, baked and then decorated with a drizzle of icing. These are super easy to make and will make your kitchen smell of that delicious cinnamon scent.<\/p>\n\n\n\n

As with any shortbread, keeping the butter and dough cold is essential to keep the shape of the cookie. Also, ensure the butter\/sugar filling isn’t too warm or it’ll be hard to manage! The dough gets a little fridge time before baking, which allows everything to firm up before slicing.<\/p>\n\n\n\n

The Cutest Mini Cinnamon Roll Cookies<\/h2>\n\n\n\n

Makes: About 15 Small Cookies
Prep Time: 15 Minutes
Bake Time: 15 Minutes
Total Time: 1 Hour 30 Minutes (Including chill time)<\/p>\n\n\n\n

Ingredients<\/h3>\n\n\n\n
  • 110g Butter, Cold<\/li>
  • 50g Granulated Sugar<\/li>
  • 180g Plain Flour<\/li>
  • 1 Tbsp Milk<\/li><\/ul>\n\n\n\n

    For the Filling:<\/p>\n\n\n\n

    • 2 Tbsp Butter, Softened (slightly melted)<\/li>
    • 2 Tbsp Light Brown Sugar<\/li>
    • 1 Tbsp Cinnamon<\/li><\/ul>\n\n\n\n

      For the Glaze: <\/p>\n\n\n\n

      • 100g Icing Sugar<\/li>
      • 2 Tbsp Milk<\/li><\/ul>\n\n\n\n

        Method<\/h3>\n\n\n\n
        1. Combine the butter, sugar and flour in a food processor (or rub together with fingertips in a large bowl) until the texture resembles breadcrumbs. Add the milk and bring together into a bowl.<\/li>
        2. Tip onto a lightly floured surface and roll flat into a rectangle of about 20x30cm.<\/li>
        3. Make the filling by combining all ingredients. Spread this over the dough, ensuring it’s not warm.<\/li>
        4. Roll the dough into a log, starting from a longer side. Keep it as tight as possible. Wrap in cling film\/baking paper and place in the fridge for at least 1 hour.<\/li>
        5. Preheat the oven to 180C\/160C Fan\/Gas 5. Line 2 large baking trays. Take the shortbread roll out of the fridge and slice into about 15 cookies. Place spiral side up onto the two baking trays.<\/li>
        6. Bake for approx 15 minutes – until golden and crisp at the edges. Remove and let cool before drizzling with icing.<\/li>
        7. Make the glaze by combining the icing sugar and milk. Place the cookies on a wire rack. Drizzle the glaze over the cookies with a small teaspoon. You could eat now, or let the glaze set first! <\/li><\/ol>\n\n\n\n
