Fudgy, chocolatey, chewy, crispy, salty – everything good comes together to create these Rocky Road Chocolate Fudge Brownies. The beauty of this recipe is that you can sub any other ingredients, but I do recommend keeping the quantity similar for a great texture.<\/p>\n\n\n\n

These brownies have all the good qualities of a classic fudgy brownie, but with that Rocky Road vibe. I love combining textures and love the sweet\/salty combo of these. I find they take longer to bake than classic brownies, just as they are a fair bit bigger with all the add ins. Rocky Road Chocolate Fudge Brownies<\/h2>\n\n\n\n

Makes: 9 (8″ square tin)
Prep Time: 15 Minutes
Bake Time: 40 Minutes
Total Time: 55 Minutes<\/p>\n\n\n\n

Ingredients<\/h3>\n\n\n\n
  • 170g Butter<\/li>
  • 100g Granulated Sugar<\/li>
  • 100g Light Brown Sugar<\/li>
  • 2 Eggs<\/li>
  • 1 Tsp Vanilla Extract<\/li>
  • 100g Dark Chocolate<\/li>
  • 90g Plain Flour<\/li>
  • 30g Cocoa Powder<\/li>
  • 50g Digestive Biscuits<\/li>
  • 50g Pretzels<\/li>
  • 150g Chocolate, Chopped<\/li>
  • 5 Tsp Marshmallow Fluff <\/li><\/ul>\n\n\n\n

    Method<\/h3>\n\n\n\n
    1. Preheat the oven to 200C\/180C Fan\/Gas 6. Line an 8″ square baking tin.<\/li>
    2. In a small bowl, break up the dark chocolate and melt in the microwave in 20 second intervals, stirring in between to make sure it doesn\u2019t burn.<\/li>
    3. In a large mixing bowl, whisk together butter and both sugars. With an electric\/stand mixer, go for a solid 3-5minutes so it is totally combined. Add in the eggs, one at a time and mixing in between. Add the vanilla and mix again.<\/li>
    4. Now, add the chocolate slowly (check it first, to make sure it isn\u2019t so hot that it will cook the eggs) and combine once again.\u00a0<\/li>
    5. Add the flour and cocoa powder, fold gently into the wet mixture with a rubber spatula or wooden spoon until just combined. Fold in all the mix ins.<\/li>
    6. Pour the batter into the lined pan and add any remaining mix ins, and top with some of the marshmallow fluff. Bake approx 30-35 minutes. Remove pan from oven once cooked, and leave the brownies in the pan on a wire rack until totally cooled. Then remove and slice!<\/li><\/ol>\n","protected":false},"excerpt":{"rendered":"
