I have eradicated the need for lots of over whisking of eggs or playing with double boilers\/bain Maries. HOWEVER, you want it to be totally melted in order to get that crispy, shiny top! <\/li><li>Brown Sugar: Soft packed light brown sugar gives taste and texture to your baking, it adds to the richness and fudgy texture. With an electric\/stand mixer, go for a solid 3-5minutes so it is totally combined. Add in the eggs, one at a time and mixing in between.
