A matcha lovers dream: These Matcha Green Tea and White Chocolate Brownies are a really fun way to get some antioxidant and matcha goodness into you! These aren’t overwhelmingly ‘green tea’ flavoured, but just enough for that adult vibe. The white chocolate adds just the right amount of sweetness for a decadent, fudgy bake!

These brownies come together really quickly, with minimal hassle! The ingredients should all be easy to find in your local supermarket. The green of the bake is such a fun thing, and the matcha isn’t too overwhelming. The drizzle on top is, of course, optional. If doing this, make sure to do it once the blondies have totally cooled otherwise the icing can melt!

To make these blondies, we rely heavily on the melted butter and light brown sugar to give the fudgy texture and super shiny topping. To make the shiny topping, there are arguments as to whether it’s the egg, or the molten sugar in the butter, so I do both. This recipe cuts neatly into 9 pieces, but could be sliced smaller, and the recipe is easily doubled. They keep well in an airtight container for a few days.

TIPS FOR THE BEST Matcha Green Tea and White Chocolate Brownies

  • Brown Sugar: This is crucial to the perfect fudgy texture and deep flavour. You could use dark brown soft if you’re really in a pinch. Light brown is definitely your best friend in brownies.
  • Melted Butter: This is what gives brownies that oh so Instagrammable shiny, crisp top. Don’t skip this step!
  • Matcha: Any Matcha green tea powder will work in this bake. This is pretty commonly available in most major supermarkets now, as well as lots of the standard online retailers!
  • Melted White Chocolate: This gives the bake its richness and sweetness. Be really careful melting the white chocolate as it is prone to burning! Also, the addition of extra white chocolate on top is optional but highly recommended.

For these Matcha Green Tea and White Chocolate Brownies I use a basic 8′ square pan (I like this one), and recommend using an electric or stand mixer to really combine the butter and sugars (with a mixer like this). Ingredients

  • 125 g White Chocolate Melted
  • 170 g Unsalted Butter Melted
  • 125 g Granulated Sugar
  • 75 g Light Brown Soft Sugar
  • 2 Medium Free Range Eggs
  • 2 tsp Vanilla Extract
  • 1 tbsp Golden Syrup or Honey/Light Corn Syrup/Maple Syrup
  • 115 g Plain Flour
  • 15 g Matcha Powder

Instructions

  • Pre-heat your oven to 200C/180C Fan/Gas Mark 6. Line an 8″ Square Pan with greaseproof paper.

  • In a large mixing bowl, whisk together the melted butter and both sugars. With an electric/stand mixer, go for a solid 3-5minutes so it is totally combined. Add in the eggs, syrup/honey and vanilla extract and mix again.
  • Whisk in the melted white chocolate until fully incorporated.
  • Fold in the flour and matcha. Pour into the lined tray and bake 25-30 minutes, until golden and no longer wobbly in the middle (a little is fine). Let cool.
  • Optional: Decorate with extra melted white chocolate, or combine matcha powder, icing sugar and milk to create a quick glaze!
