These Glazed Strawberry Brownies are a gorgeous alternative to a heavy chocolate brownie. Full of that fudgy texture but with strawberry flavors and a fresh strawberry glaze! These are a lovely Summer bake when you want to serve something hearty that doesn’t feel so heavy!

For these brownies, we rely on a boxed strawberry cake mix for the easiest recipe ever. This recipe cuts neatly into 9 pieces, but could be sliced smaller. If serving a crowd, I’ll cut each square into 2 triangles, giving 18 pieces. Plus, the recipe is easily doubled using 2 pans. They keep well for a few days. That said, they don’t last long if you’ve got lots of happy hungry mouths in the house!

The glaze is made from strawberry preserve, powdered sugar and cream. This means this bake has minimal hands on time. You will end up feeling like you’ve made something delicious without having spent hours in the kitchen! We don’t all have the same 24 hours in a day and this recipe will fit into busy lives easily.

Glazed Strawberry Brownies

INGREDIENTS REQUIRED 

There are no specialist ingredients or equipment required for this bake. I can find everything I need at my local supermarket or grocery store. Also, I use a standard 8 inch square tin for almost all of my traybake recipes for ease. If you do want to convert to 9 inch, you’ll need to play with the quantities a little or they will be too thin. To line a square baking tin, cut two pieces of baking paper that are just narrower than the width of the tin (less than 8 inches wide). Then place one on top of the other in opposite directions, so that all four edges of the tin are covered. This will make removing the bake so much easier!

Why Use Cake Mix to Make Brownies?

Using cake mix to make brownies has several advantages:

  2. Simplicity: The recipe is straightforward and requires minimal additional ingredients—usually just eggs and oil.
  3. Consistent Results: Cake mixes are designed for reliable outcomes, so you’re likely to get good results every time.
  4. Versatility: You can customize cake mix brownies by adding chocolate chips, nuts, or other mix-ins to suit your taste.
  5. Texture Variation: Cake mix brownies tend to have a softer and more cake-like texture, which some people prefer over traditional fudgy brownies.
  6. Quick Baking: They often bake faster than from-scratch recipes, making them a great option for last-minute desserts.
  7. Flavor: Strawberry extract can be a hard ingredient for a lot of people to find, which is what is needed for the strawberry flavor to pop. Cake mix is something people will find much more easily in local grocery stores so it made sense to try with something we can all access!

TOP TIPS FOR THE BEST Glazed Strawberry Brownies

  • Strawberry Cake Mix: Use any store bought strawberry cake mix. This gives the brownies the color and flavor that really pops.
  • Large Eggs: Use room temperature eggs.
  • Vegetable Oil: You can use either butter or oil – just make sure to use an unflavored oil like vegetable or canola.
  • White Chocolate: Use either chopped white chocolate or chocolate chips. Both are great. If you don’t like white chocolate, you can absolutely use whichever other chocolate you prefer.
  • Batter: Once mixed, the batter will be really thick and sticky but that’s okay! You might find a rubber spatula the best tool to push the batter to the edges of the lined pan. You can also use clean hands to really get the edges!
  • Glaze: Make the glaze in a small bowl before pouring over the cooled brownies while they are still in the pan. Let set before slicing and serving.

STORAGE FOR MY Glazed Strawberry Brownies

Because these brownies don’t use a fresh frosting, place in an airtight container and keep in a cool place like your cupboard or pantry. They will keep for up to 3 days this way. A cake tin is a great option if you have one. 

Alternatively, you can freeze the brownies. Completely wrap as tight as you can using cling film/Saran wrap. If you have an airtight container too, place it in there before freezing. Let thaw in the fridge before serving. I like to give them a quick 10-15 second blast in the microwave before eating for that extra gooeyness.

Ingredients

  • 15.25 oz (425 g) Box Strawberry Cake Mix
  • 2 (2) Large Free Range Eggs
  • Cup (160 ml) Vegetable Oil or Unsalted Butter
  • 1 Cup (180 g) White Chocolate Chips

For the Glaze

  • 2 tbsp (2 tbsp) Strawberry Preserve
  • 1 Cup (120 g) Powdered Sugar
  • 2 tbsp (2 tbsp) Heavy Cream or Whole Milk

Instructions

  • Preheat the oven to 350℉/170℃. Line an 8×8" pan.
  • In a large bowl, whisk together the cake mix, eggs, oil and white chocolate chips.
  • Spread evenly in the pan. The mixture is thick so press into the edges.
  • Bake 20-25 minutes, until the top is only a little wobbly. Let cool.
  • Once cool, make the glaze by combining the ingredients in a bowl and whisking until smooth. Pour over the brownies while they are still in the pan.
  • Let set before slicing and serving.
