These Tiramisu Croissants are just the perfect way to start a weekend. I picture these against a backdrop of fresh coffee, lit candles, back door left open to let in the breeze, with the first hints of Summer in the air. That said, they really are divine for any sort of occasion and are a wonderful thing to bring out when entertaining/hosting brunch. They come together in next to no time, and look so fabulous with really minimal effort!

This recipe makes use of store bought croissants that get brushed with coffee, then filled with a mascarpone/tiramisu style mixture. Pipe extra little blobs of the mascarpone mix onto the top of the croissants and dust with cocoa powder for the picture perfect look!

We don’t all have the same 24 hours in a day, and this recipe proves that you really don’t need much time to create something with love to share with the family on a cozy weekend morning. These are definitely best eaten freshly after assembling. If you’re feeding a crowd, this recipe is super easy to double up.

INGREDIENTS NEEDED

There are no specialist ingredients or equipment required for this bake. I can find everything I need at my local supermarket or grocery store. I use a large sheet pan with a sheet of baking paper just to keep the mess of the cocoa powder contained. The mascarpone can easily be substituted with cream cheese, just make sure to buy the full fat version!

  • Plain Croissants

  • Mascarpone (or Full Fat Cream Cheese)
  • Heavy Cream
  • Powdered Sugar
  • Vanilla Extract
  • Cocoa Powder

USING UP STALE CROISSANTS

There are SO many ways to use up stale croissants, but this is by far one of my favorites. Fresh croissants are obviously best, but if they are starting to go stale, pop them into the oven for 15 minutes to revive them – let cool before piping the filling, as otherwise it will melt. You can also find a bread and butter pudding using old croissants in my cookbook ‘Part-Time Baker’. Using up stale croissants doesn’t have to be a challenge. In fact, with a little creativity, you can turn those slightly past-their-prime pastries into something delicious. Here are several ways to breathe new life into your stale croissants:

  • French Toast: Transform your croissants into a luxurious breakfast by slicing them in half and soaking them in a mixture of beaten eggs, milk, sugar, vanilla extract, and a pinch of cinnamon. Cook on a buttered skillet until golden brown and serve with maple syrup.
  • Bread Pudding: Cut the croissants into chunks and mix them with raisins, nuts, and a custard made from eggs, sugar, milk, and vanilla. Bake until the custard is set for a comforting dessert.
  • Croutons: Dice the croissants, toss them with melted butter and your favorite seasonings, and bake until crispy. They’ll add a buttery crunch to soups and salads.
  • Croissant Pudding: Similar to bread pudding, you can soak pieces of croissants in a chocolate or lemon custard before baking for a twist on the classic dessert.

By repurposing your stale croissants in these ways, not only do you reduce food waste, but you also get to enjoy a variety of delicious new treats.

TOP TIPS FOR THE BEST Tiramisu Croissants

  • Plain Croissants: You can buy these new from the store, I tend not to make my own as I find it to be such a hassle. If you do want the challenge, go wild!
  • Unsalted Butter: The combination of butter with the mascarpone/cream cheese creates a much better consistency.
  • Cream Cheese: If you prefer, you can use cream cheese. Use the same quantity, but make sure it is full fat! The low fat variation will lead to a frosting that is too runny to pipe well.
  • Piping: Use a star nozzle tip to create those cute little ‘puffs’ of filling. You can just smear it over too, it will still taste wonderful!
  • Cocoa Powder: Where possible try to use a higher quality make. This contributes so much to the flavour and I find some cheap ones really dull the richness! Also, the cocoa powder takes such a prominent place in this recipe so you want to make sure you like the one you use! Dust the cocoa powder over the top at the end for a really Instagrammable effect.
  • Variations: Feel free to change these up by using a coffee liqueur in place of the coffee, use strawberry cream cheese or even add fresh berries to suit whatever you like!

STORAGE FOR Tiramisu Croissants

As these are made using fresh dairy ingredients, these need to be stored in the refrigerator. Make sure to seal in an airtight container. If you have extra filling, that can also be stored in the refrigerator for 1-2 days. These are definitely best eaten as soon after assembly as possible, but if you are making them in advance, place in the refrigerator until you are ready to serve. You can also just make the filling ahead of time, to then pipe just as you’re ready to serve.

Ingredients

  • 4 (4) Large Croissants Store bought
  • 4 tbsp Fresh Brewed Coffee/Espresso
  • 50 g (4 tbsp) Unsalted Butter Room Temperature
  • 250 g (1 cup) Mascarpone/Full Fat Cream Cheese
  • 100 ml (½ cups) Heavy Cream
  • 60 g (½ cups) Powdered Sugar
  • 2 tsp (2 tsp) Vanilla Extract
  • 2 tbsp Cocoa Powder to decorate

Instructions

  • Slice open the croissants lengthways to expose the inside. Brush the insides with the coffee.
  • In a large bowl with an electric mixer, or in the bowl of a stand mixer, whisk the butter on high. Add the mascarpone (or cream cheese) and whisk for several minutes until smooth and thoroughly combined (scrape down the sides of the bowl so that everything gets mixed.
  • Add the powdered sugar, cream and vanilla and mix again to create a luscious thick frosting. Add more cream if needed to create a pipe-able consistency.
  • Place the filling into a piping bag with a star nozzle and pipe on one side of each croissant. Place the croissant tops back on. Pipe on more of the filling if desired. Top with a dusting of cocoa powder (through a sieve so that it's super fine). Serve immediately!
