Tiramisu Croissants

These are just the perfect way to start a weekend. I picture these against a backdrop of candles, back door left open to let in the breeze, with the first hints of Summer in the air. That said, they really are divine for any sort of occasion and are a wonderful thing to bring out when entertaining/hosting brunch. They come together in next to no time, and look so fabulous with really minimal effort!

Ingredients

  • 4 (4) Large Croissants Store bought
  • 4 tbsp Fresh Brewed Coffee/Espresso
  • 50 g (4 tbsp) Unsalted Butter Room Temperature
  • 250 g (1 cup) Mascarpone/Full Fat Cream Cheese
  • 100 ml (½ cups) Heavy Cream
  • 60 g (½ cups) Powdered Sugar
  • 2 tsp (2 tsp) Vanilla Extract
  • 2 tbsp Cocoa Powder to decorate

Instructions

  • Slice open the croissants lengthways to expose the inside. Brush the insides with the coffee.
  • In a large bowl with an electric mixer, or in the bowl of a stand mixer, whisk the butter on high. Add the mascarpone (or cream cheese) and whisk for several minutes until smooth and thoroughly combined (scrape down the sides of the bowl so that everything gets mixed.
  • Add the powdered sugar, cream and vanilla and mix again to create a luscious thick frosting. Add more cream if needed to create a pipe-able consistency.
  • Place the filling into a piping bag with a star nozzle and pipe on one side of each croissant. Place the croissant tops back on. Pipe on more of the filling if desired. Top with a dusting of cocoa powder (through a sieve so that it's super fine). Serve immediately!
