Ingredients

  • 2 Cups (450 ml) Apple Cider (non-alcoholic – see notes below)
  • 2 Cups (250 g) All Purpose Flour
  • ยฝ Cup (100 g) White Sugar
  • ยผ Cup (55 g) Light Brown Soft Sugar
  • 1 tsp (1 tsp) Baking Powder
  • ยฝ tsp (ยฝ tsp) Baking Soda
  • 2 tsp (2 tsp) Ground Ginger
  • 2 tsp (2 tsp) Ground Cinnamon
  • ยฝ Cup (115 g) Unsalted Butter Melted
  • 2 (2) Large Eggs
  • ยฝ Cup (120 ml) Milk

For the Topping

  • ยผ Cup (55 g) Unsalted Butter Melted
  • ยผ Cup (50 g) White Sugar
  • 1 tsp (1 tsp) Ground Cinnamon

Instructions

  • Add the apple cider to a saucepan and bring to a boil – keep on a rolling boil until it has reduced to about 1 cup volume (approx 10 minutes). Set aside to cool.
  • Preheat the oven to 375โ„‰/190โ„ƒ. Line a 12 hole muffin pan.
  • In a large bowl, gently whisk together the flour, white sugar, light brown sugar, baking powder, baking soda, ginger and cinnamon.
  • To this bowl, add the reduced apple cider, melted butter, eggs and milk – use a wooden spoon/spatula to bring together. Electric mixers will make the muffin batter too dense.
  • Spoon the batter into the lined muffin pan, filling each case to about 2/3 full.
  • Bake 15-16 minutes, until golden on top.

For the Topping

  • Melt the butter and put in a small bowl (wide enough to dip the muffin tops into). In another bowl, combine the sugar and cinnamon.
  • While the muffins are warm (but not too hot to touch), dunk the top of each muffin into the melted butter, then into the sugar/cinnamon mix to coat. Repeat for each muffin! Once cool, serve!

Apple Cider:
  • In the US, apple cider is a non-alcoholic juice like drink. It is not to be confused in this recipe with hard cider!
  • If you don’t have access to American style apple cider, you can use apple juice/cloudy apple juice.ย
