I struggled to name these Banana Split Brownies, as they are such a bomb combination. Gooey chocolate brownie topped with a banana cheesecake style topping and sprinkled with nuts. Kinda like cheesecake brownies, kinda with banana vibes? As such, banana split brownies felt appropriate.

The brownie layer is a pretty simple brownie mixture. We then make a cream cheese/banana mixture that goes on top of the brownie, then everything gets baked together. These are so simple but come out looking awesome! Great for an Insta pic. I like to sprinkle nuts on top for a little texture, but feel free to omit.

When making the cheesecake layer, make sure to use full fat cream cheese. The low fat stuff has a different texture once baked, and I find it just doesn’t work as well. For the brownies themselves, we rely on the melted butter and brown sugar for texture, so don’t scrimp on these!

For these Banana Split Brownies, I use a basic 8′ square pan (I like this one). I also recommend a good stand mixer or high speed mixer (like this one) to make the brownie mixture. Banana Split Brownies

Banana Split Brownies: A layer of fudgy brownie is topped with a banana cheesecake layer for the perfect banana chocolate combo treat!

Ingredients

  • 100 g Dark Chocolate
  • 170 g Unsalted Butter Melted
  • 100 g Granulated Sugar
  • 100 g Light Brown Sugar
  • 2 Medium Eggs
  • 1 tsp Vanilla Extract
  • 85 g Plain Flour
  • 30 g Cocoa Powder

For the Banana Topping

  • 1 Large Ripe Banana Mashed
  • 120 g Full Fat Cream Cheese
  • 50 g Icing Sugar
  • 1 Medium Egg
  • 30 g Chopped Nuts Optional

Instructions

  • Preheat the oven to 200C/180C Fan/Gas 6. Line an 8" Square Pan.
  • Start by melting the dark chocolate: break up the dark chocolate and melt in the microwave in 20 second intervals, stirring in between to make sure it doesn’t burn.
  • Combine the melted butter, granulated sugar and light brown sugar in a large bowl/bowl of a stand mixer – on a medium speed for 3-5 minutes.
  • Add in the eggs and vanilla and mix again. Then, checking first that the chocolate isn't so hot as to cook the eggs, add it in and keep mixing.
  • Add the flour and cocoa powder and fold in gently. Pour the batter into the prepared tin.
  • Make the cheesecake layer by combining all ingredients in a small bowl. Pour this mixture over the brownie layer.
  • Bake for 35-40 minutes, until the top is no longer 'wobbling'. Scatter over nuts if using. Let cool on a wire rack before slicing and serving.
