These Passion Fruit Martini Blondies aka Pornstar Martini Blondies are a fun twist on the classic Pornstar Martini, but made into a blondie! Fudgy white chocolate blondies get topped with a passionfruit frosting and extra drizzle. You can use either fresh passion fruit or some kind of pre-packaged/bottled coulis, as I do! This means you can make these all year round!
Perfect for lovers of a good Pornstar Martini – this bake is sweet, fruity and zesty. The blondie itself is ever so simple to make, packed full of white chocolate. Blondies rely on lots of melted white chocolate which creates this insanely fudgy texture. When this meets white chocolate chunks, you’re in for a good time! These are pretty versatile, so feel free to add nuts, or change up the type of chocolate chunks that get added at the end! However, I think the combination of white chocolate and passion fruit is a truly dreamy match.
These will store for a few days in an airtight container. Make sure to let cool fully before frosting. For the best buttercream, and to make sure it doesn’t split, make sure your ingredients are at room temperature!

Tips for the best Passion Fruit Martini Blondies
- Eggs: These get whisked on high for several minutes until really fluffy! This adds a lightness to the texture.
- Melted Butter: This is what gives brownies that oh so Instagrammable shiny, crisp top. Don’t skip this step!
- Chocolate: I use lots of chopped white chocolate as a mix in, but chocolate chips or really any chocolate will work!
- Passion Fruit: I use the bottled passion fruit coulis you can find in large supermarkets, near the meringue/desserts/jam aisle. Fresh passion fruits are always the ideal, but I know for most of us they may not have year-round availability.
- Frosting: This recipe creates a good thick layer of frosting. To prevent the buttercream from splitting, make sure your butter (and all other ingredients) are at room temperature.
For these Passion Fruit Martini Blondies I use a basic 8′ square pan (I like this one), and recommend using an electric or stand mixer to really combine the butter and sugars (with a mixer like this). Passion Fruit Martini Blondies
Ingredients
- 2 Medium Free Range Eggs
- 80 g Granulated Sugar
- 200 g White Chocolate Melted
- 120 g Unsalted Butter Melted
- 2 tsp Vanilla Extract
- 170 g Plain Flour
- 100 g White Chocolate Roughly Chopped
For the Frosting
- 120 g Unsalted Butter Room Temperature
- 275 g Icing Sugar
- 1 tbsp Passion Fruit Juice/Coulis
- Passion Fruit Juice/Coulis to decorate
Instructions
- Preheat the oven to 180C fan/200C/400F/gas mark 6 and line an 8 inch baking tin.
- Start by whisking the eggs on high speed with an electric mixer for 5 minutes, until pale and fluffy. Add the sugar and whisk again.
- Add in the melted white chocolate, melted butter and vanilla extract and whisk until combined. Fold in the flour, then the chopped white chocolate.
- Pour into the lined tin and bake 30 minutes. Let cool before frosting.
For the Frosting
- Add the butter to a large mixing bowl. Beat with a whisk on high for a minute to soften/combine everything.
- Add half the icing sugar, whisk on high. Then add 1 tbsp passion fruit juice/coulis, and remaining half icing sugar and whisk everything on high until fluffy. Add passion fruit/icing sugar as required to meet your desired consistency. Spread over the cooled brownies, top with a little extra passion fruit drizzle, slice and serve!
