These Chocolate Peanut Butter Triple Stacked Brownies are a legendary bake for anyone who loves that peanut butter/chocolate combo. Brownies, peanut butter filling and melted chocolate go together so well, and result in a really easy but really exciting bake!

The brownies themselves are super simple, dense and fudgy. They then get layered with a peanut butter filling and topped with melted dark chocolate! The layers all work together really well, and do need some chill time in the fridge to set before slicing and serving. For neat slices, cut with a hot knife.

For these brownies, we rely heavily on the melted butter and light brown sugar to give the fudgy texture and super shiny topping. You could make these for a bake sale – and the recipe is easily doubled. They keep well in an airtight container for a few days. That said, they don’t last long if you’ve got lots of happy hungry mouths in the house!

TIPS FOR THE BEST Chocolate Peanut Butter Triple Stacked Brownies

  • Brown Sugar: This is crucial to the perfect fudgy texture and deep flavour. You could use dark brown soft if you’re really in a pinch. Light brown is definitely your best friend in brownies.
  • Melted Butter: This is what gives brownies that oh so Instagrammable shiny, crisp top. Don’t skip this step!
  • Cocoa Powder: As this is a key component, I do recommend a decent quality cocoa powder – but don’t stress if you don’t have any!
  • Peanut Butter: I prefer using a cheaper/less natural version of peanut butter due to the structure it gives. If using natural, you may find you need more icing sugar. Also I recommend a smooth PB here.

For these Chocolate Peanut Butter Triple Stacked Brownies, I use a basic 8′ square pan (I like this one). Chocolate Peanut Butter Triple Stacked Brownies

Ingredients

  • 100 g Dark Chocolate Melted
  • 170 g Butter Melted
  • 100 g Granulated Sugar
  • 100 g Light Brown Sugar
  • 2 Medium Free Range Eggs
  • 85 g Plain Flour
  • 30 g Cocoa Powder

For the Peanut Butter Filling

  • 80 g Smooth Peanut Butter
  • 80 g Butter
  • 100 g Icing Sugar

For the Topping

  • 200 g Dark Chocolate

Instructions

  • Preheat the oven to 200C/180C Fan/Gas 6. Line an 8 inch square tin. Melt the dark chocolate in the microwave in 20 second intervals. Set aside.
  • In a large bowl/the bowl of a stand mixer, combine the melted butter and both sugars. Add the eggs and mix again. Slowly incorporate the melted chocolate until everything is fully combined. 
  • Fold in the flour and cocoa powder until just combined. Pour the batter into the tin and bake for 30 minutes. Let cool about 20 minutes before making the topping.
  • Make the filling: combine the butter, peanut butter and icing sugar until fluffy (use an electric whisk/stick blender). Spread over the brownie.
  • Melt the dark chocolate for the topping in the microwave (checking at 20 second intervals). Once melted, pour over the brownies. Set in the fridge for at least an hour.
  • Slice with a hot knife for perfect lines!
