These Banana Bread Bars with Chocolate and Pecans are essentially a banana bread made so much cuter. These little squares of banana bread happiness are so easy to make and much easier to eat on the go. This means I also recommend these for picnics, lunch boxes, BBQs and any occasion with children.

With any banana bread, the key to success is a good amount of liquid and some yummy mix-ins. I go for milk chocolate and pecans in this recipe. Feel free to sub for whatever chocolate and nut combo you like, sticking to the quantities specified. Be careful not to overmix the batter, as that can cause these to become a little dry/dense.

Even if you’re not a huge banana lover, I think these have the ability to convert. The amount of banana means the flavour is there but baked and sweet, so it is less ‘in your face’. Make sure to use very ripe bananas. Bananas that are starting to brown/getting REALLY brown are the best as they are the sweetest. I sometimes buy bananas and let them sit on the counter for a while specifically for this purpose.

For these Banana Bread Bars with Chocolate and Pecans, I use a basic 8′ square pan (I like this one). I also recommend a good stand mixer or high speed mixer (like this one). Banana Bread Bars with Chocolate and Pecans

A great twist on banana bread, making these much cuter to eat and serve. They make a great grab-and-go or lunchbox snack. Make sure your bananas are super ripe, or brown even, for the sweetest taste. Don't overmix the batter to make sure these are mega moist; I just use a wooden spoon.

Ingredients

  • 3 Medium Bananas
  • 110 g Butter Melted
  • 75 g Light Brown Sugar
  • 50 g Granulated Sugar
  • 1 tsp Vanilla Extract
  • 1 Medium Egg
  • 200 g Plain Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Ground Cinnamon
  • 50 g Pecans (or any other nut), Chopped
  • 100 g Milk Chocolate Chopped

Instructions

  • Preheat the oven to 200C/180C Fan/Gas 6. Line an 8" square baking tin.
  • In a large bowl, mash the bananas. Then add the butter, both sugars, vanilla and egg (ensure the butter has cooled a little so the egg doesn’t cook). Mix with a wooden spoon until combined.
  • Add the dry ingredients: flour, baking powder, baking soda, cinnamon, chocolate and pecan nuts. Stir until just combined.
  • Pour the batter into the prepared tin and bake for 30-35 minutes; until golden brown and a skewer inserted comes out clean.
