All you need to do is push the dough around with your hands and wrists until it looks springy. This recipe is easily doubled and can be frozen.

INGREDIENTS REQUIRED
There are no specialist ingredients or equipment required for this bake. I can find everything I need at my local supermarket or grocery store. Bake the pizza cups in a regular sized muffin pan. Be sure to grease the pan generously so that the pizza cups pop right out after baking!

- Fast Acting/Instant Dried Yeast
- Salt
- Olive Oil

Top Tips for the best Easy Pepperoni Pizza Cups
- Dough: If you’re not sure if your yeast has expired you can test by ‘blooming’ it. Place in the bowl with water and sugar and wait to see if it goes bubbly/frothy after 5-10 minutes. If so, it’s good to use. If not, throw the yeast out and buy more!
- Dough rising: This only needs 20-30 minutes of rise time, but that’s assuming your kitchen is room temperature or above. If you have a cold kitchen, find a warm place – like over a radiator OR turn the oven to 100f/40c. Once it reaches temperature, turn it off and let the dough rise in the oven while it’s off.
- Kneading: This really only needs ‘bringing together’ as opposed to really kneading it. Do this either by hand or in a stand mixer with the dough hook attachment. Combine with a wooden spoon first, then when it has formed a shaggy dough, give it 5-8 minutes of kneading (3-4 if using a stand mixer), until it looks springy!
- Fillings: Store bought marinara and shredded cheese make this a really easy bake. That said, feel free to play around with any filings you like! You could make an ‘alfredo’ pizza cup with sauce. You could change up the cheese to what you prefer. You could omit the pepperoni and instead use peppers and onions for a vegetarian version!
- Baking: Bake until golden and the cheese is really bubbling. Let cool a little before removing from the pan. These are absolutely best eaten warm, so if you’re making them ahead of time you can either reheat in the oven, or wait to bake until people are ready to eat!

STORAGE FOR my Easy Pepperoni Pizza Cups
These pizza cups need to be stored in the refrigerator. Make sure to place them in an airtight container prior to placing in your refrigerator. They freeze really well, making this a great recipe to double batch so that some can be stored in the freezer for a later date. To freeze, place in an airtight container/ziplock bag and freeze for up to 3 months. To defrost, place in the fridge to thaw completely before serving.
As with any bread, these are definitely best served warm. If you don’t wolf them all down before they cool, I recommend warming up in the microwave for 30 seconds prior to serving!

Easy Pepperoni Pizza Cups
Ingredients
- 7 g (¼ oz) Fast Acting/Instant Dried Yeast
- 1 tbsp (1 tbsp) Granulated Sugar
- 240 ml (1 cups) Warm Water
- 15 ml (1 tbsp) Extra Virgin Olive Oil
- 300 g (2 ½ cups) All Purpose Flour or Bread Flour
- 2 tsp (2 tsp) Salt
- 2 tsp (2 tsp) Dried Italian Herbs
- 2 tsp (2 tsp) Garlic Powder
For the Filling
- 400 g (1 ⅔ cups) Marinara Sauce
- 80 g (¾ cups) Pepperoni Roughly Chopped
- 200 g (1 ⅔ cups) Shredded Mozzarella
Instructions
- In a large bowl, or the bowl of a stand mixer, combine the water, oil, sugar and yeast. Let sit 5 minutes – the yeast should look frothy.
- Add the flour, salt, Italian herbs, garlic powder. Bring together into a shaggy dough (use a wooden spoon). Knead for 5-10 minutes on a lightly floured surface, until springy.
- Place back in the bowl and let rest 30 minutes in a warm area.
- Pre-heat the oven to 420℉/200℃ fan. Grease a 12 hole muffin pan.
- Divide the dough into 12 equal pieces. Roll into balls and place a ball in each hole of the muffin pan. Use your thumbs to press an indent into each to create a well to fill with the sauce.
- Add as much sauce as will fit into each hole in the dough. Top with cheese and pieces of pepperoni (or whatever fillings you are using).
- Bake 20-25 minutes, until golden and crispy! Let cool a little before serving!
