Easy Pepperoni Pizza Cups

These make a fabulous party appetizer or snack! They are so easy to make, and can be prepped ahead of time. The toppings are totally versatile so you can add or omit whatever you like! Try onions, peppers, sausage, meatballs or anything else you love on pizza!

Ingredients

  • 7 g (¼ oz) Fast Acting/Instant Dried Yeast
  • 1 tbsp (1 tbsp) Granulated Sugar
  • 240 ml (1 cups) Warm Water
  • 15 ml (1 tbsp) Extra Virgin Olive Oil
  • 300 g (2 ½ cups) All Purpose Flour or Bread Flour
  • 2 tsp (2 tsp) Salt
  • 2 tsp (2 tsp) Dried Italian Herbs
  • 2 tsp (2 tsp) Garlic Powder

For the Filling

  • 400 g (1 ⅔ cups) Marinara Sauce
  • 80 g (¾ cups) Pepperoni Roughly Chopped
  • 200 g (1 ⅔ cups) Shredded Mozzarella

Instructions

  • In a large bowl, or the bowl of a stand mixer, combine the water, oil, sugar and yeast. Let sit 5 minutes - the yeast should look frothy.
  • Add the flour, salt, Italian herbs, garlic powder. Bring together into a shaggy dough (use a wooden spoon). Knead for 5-10 minutes on a lightly floured surface, until springy.
  • Place back in the bowl and let rest 30 minutes in a warm area.
  • Pre-heat the oven to 420℉/200℃ fan. Grease a 12 hole muffin pan.
  • Divide the dough into 12 equal pieces. Roll into balls and place a ball in each hole of the muffin pan. Use your thumbs to press an indent into each to create a well to fill with the sauce.
  • Add as much sauce as will fit into each hole in the dough. Top with cheese and pieces of pepperoni (or whatever fillings you are using).
  • Bake 20-25 minutes, until golden and crispy! Let cool a little before serving!
