These Peanut Butter & Chocolate Oatmeal Bars (Easily Vegan) are one of those recipes that comes together like a dream. One bowl, a few simple ingredients and easily vegan. This is due to there being no eggs, and the milk/chocolate can simply be subbed for a dairy free variation.
The bars themselves are soft and chewy, with a little texture from the chocolate chunks and top. These are perfect for peanut butter lovers, and make for a great snack. I find anything oaty to be so comforting and wholesome, and these would be fabulous for a make ahead afternoon snack, or hiking treat!
The ingredients simply comprise of:
- Peanut Butter
- Brown Sugar
- Oats
- Flour
- Baking Soda
- Milk
- Chocolate Chunks
Do check your peanut butter that it’s vegan, as some can contain milk powder/other dairy items. That said, any milk/chocolate will work – so no need to make it vegan if that’s not what you have to hand/you don’t want to!
These bars are mega easy, and a great one to make with the kids. They store well and can be frozen, for moments when you fancy a treat! They are also great for bake sales, gifting or as a pick-me-up on one of *those* days. I highly recommend doubling the recipe, as you will get through them in the blink of an eye.
Tips for The Best Peanut Butter & Chocolate Oatmeal Bars (Easily Vegan)
- Peanut Butter: The cheaper stuff is better, but any is fine! I try to avoid the natural stuff when baking, as the oil percentage is different. But really, it would still work!
- Brown Sugar: Crucial for texture and that deep cookie flavour
- Chocolate: Use any chocolate you like – milk/white/dark/chips/chunks! You could also add dried fruit or nuts if you fancy!

Peanut Butter & Chocolate Oatmeal Bars (Easily Vegan)
Ingredients
- 80 g Rolled Oats
- 75 g Light Brown Soft Sugar
- 175 g Peanut Butter Smooth or Crunchy
- 145 g Plain Flour
- 1/2 tsp Baking Soda
- 150 g Chocolate Chips
- 120 ml Milk
Instructions
- Preheat the oven to 200C/180C Fan/Gas 6. Line an 8" square baking tin.
- In a large bowl, combine the oats, peanut butter and brown sugar. Beat together for a few minutes until entirely combined.
- Add in the flour, baking soda, chocolate and a pinch of salt and bring together into a cookie-dough like texture.
- Press this into the lined tin (I use my hands to press it out evenly). Bake for about 20 minutes until golden brown on top.
- Let cool on a wire rack before slicing!
