Peanut Butter & Chocolate Oatmeal Bars (Easily Vegan)

These are one of those recipes that comes together like a dream. One bowl, a few simple ingredients and easily vegan. This is due to there being no eggs, and the milk/chocolate can simply be subbed for a dairy free variation. This recipe makes about 9 squares.

Ingredients

  • 80 g Rolled Oats
  • 75 g Light Brown Soft Sugar
  • 175 g Peanut Butter Smooth or Crunchy
  • 145 g Plain Flour
  • 1/2 tsp Baking Soda
  • 150 g Chocolate Chips
  • 120 ml Milk

Instructions

  • Preheat the oven to 200C/180C Fan/Gas 6. Line an 8" square baking tin.
  • In a large bowl, combine the oats, peanut butter and brown sugar. Beat together for a few minutes until entirely combined.
  • Add in the flour, baking soda, chocolate and a pinch of salt and bring together into a cookie-dough like texture.
  • Press this into the lined tin (I use my hands to press it out evenly). Bake for about 20 minutes until golden brown on top.
  • Let cool on a wire rack before slicing!
