Black Forest Cherry & Chocolate Brownies

Jumping straight out of the 1970s, these are a true delight. Made with a classic fudgy brownie recipe, chocolate chunks and lots of fresh cherries, these are so fun. I highly recommend eating whilst still warm with a classic vanilla ice cream. Also delightful when cool! This recipe is baked in an 8" square pan, and is easily doubled.

Ingredients

  • 100 g Dark Chocolate Melted
  • 170 g Butter Melted
  • 100 g Granulated Sugar
  • 100 g Light Brown Sugar
  • 2 Medium Eggs
  • 90 g Plain Flour
  • 30 g Cocoa Powder
  • 100 g Cherries Pitted and Roughly Chopped
  • 100 g Milk Chocolate Chopped
  • 25 g Milk Chocolate Optional (to decorate)

Method

  1. Pre-heat your oven to 200C/180C Fan/Gas Mark 6. Line an 8" Square Pan with greaseproof paper.
  2. In a small bowl, break up the dark chocolate and melt in the microwave in 20 second intervals, stirring in between to make sure it doesn't burn.
  3. In a large mixing bowl, whisk together melted butter and both sugars. With an electric/stand mixer, go for a solid 3-5minutes so it is totally combined. Add in the eggs, one at a time and mixing in between.
  4. Now, add the chocolate slowly (check it first, to make sure it isn't so hot that it will cook the eggs) and combine once again.
  5. Add the flour and cocoa powder, plus a pinch of salt. Fold gently into the wet mixture with a rubber spatula or wooden spoon until just combined. Fold in the chopped cherries and chocolate. Pour the batter into the lined pan.
  6. Bake approx 30-35 minutes. Remove pan from oven once cooked, and leave the brownies in the pan on a wire rack until totally cooled. Then slice and serve!
  7. Optional: Melt 25g Milk Chocolate and use a teaspoon to drizzle over the brownies for decoration.
