Copycat Costa Fruit & Oat Biscuits (Easily Vegan)

These are a great bake for the coffee shop lovers. Costa Coffee is a chain of coffee shops in the UK. These little biscuits (cookies) are a delicious little treat and are really so easy to make! No chill time, no unusual ingredients and so easy! This recipe makes about 10.

Ingredients

  • 130 g Plain Flour
  • 120 g Rolled Oats
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Ground Cinnamon
  • 100 g Golden Syrup Warm/Runny
  • 100 g Granulated Sugar
  • 100 g Butter Room Temp
  • 100 g Dried Mixed Fruit

Instructions

  • Preheat the oven to 200C/180C Fan/Gas 6. Line 2/3 large baking sheets.
  • Put the golden syrup into a small bowl and heat in the microwave for 20 seconds to loosen.
  • Combine all dry ingredients in a large bowl (flour, oats, baking powder, baking soda, cinnamon).
  • Add the syrup, butter, and sugar. Use a wooden spoon to bring together.
  • Scoop tbsp sized balls of the mixture, roll into a log/oval shape and lay out on the cookie trays (at least 2 inches apart). Bake for 10-12 minutes, until golden brown. Let cool on a wire rack before serving.
