Double Chocolate Banana Cake with Chocolate Frosting

Light and fluffy chocolate frosting tops a moist chocolate banana cake. I love a mild flavoured banana cake, so the combination of chocolate creates a fabulous bake! This comes together really easily, and the banana cake recipe is super simple and delicious in itself!

Ingredients

  • 110 g Unsalted Butter Melted
  • 2 Medium Bananas Mashed
  • 75 g Light Brown Sugar
  • 50 g Granulated Sugar
  • 1 Medium Free Range Egg
  • 1 tsp Vanilla Extract
  • 200 g Plain Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 30 g Milk Chocolate Melted
  • 3 tsp Cocoa Powder

For the Frosting

  • 110 g Unsalted Butter Softened
  • 300 g Icing Sugar
  • 25 g Dark Chocolate Melted

Instructions

  • Preheat the oven to 200C/180C Fan/Gas 6. Line an 8" square baking tin.
  • In a large bowl, mash the bananas. Then add the butter, both sugars and the egg (ensure the butter has cooled a little so the egg doesn’t cook). Mix until combined.
  • Add the flour, baking powder, baking soda, cocoa powder and melted milk chocolate. Fold everything together until combined.
  • Pour into the lined tin and bake for 35-40 minutes, until a skewer inserted comes out clean. Let cool on a wire rack.
  • Make the frosting in a large bowl, combine the butter, melted chocolate and half the icing sugar - using an electric whisk on high. Gradually add the remaining icing sugar until thick and smooth. Spread over the cake. Add any optional decorations !Slice and serve!
