Glazed Strawberry Brownies

These Glazed Strawberry Brownies are a gorgeous alternative to a heavy chocolate brownie. Full of that fudgy texture but with strawberry flavors and a fresh strawberry glaze! These are a lovely Summer bake when you want to serve something hearty that doesn't feel so heavy!

Ingredients

  • 15.25 oz (425 g) Box Strawberry Cake Mix
  • 2 (2) Large Free Range Eggs
  • Cup (160 ml) Vegetable Oil or Unsalted Butter
  • 1 Cup (180 g) White Chocolate Chips

For the Glaze

  • 2 tbsp (2 tbsp) Strawberry Preserve
  • 1 Cup (120 g) Powdered Sugar
  • 2 tbsp (2 tbsp) Heavy Cream or Whole Milk

Instructions

  • Preheat the oven to 350℉/170℃. Line an 8x8" pan.
  • In a large bowl, whisk together the cake mix, eggs, oil and white chocolate chips.
  • Spread evenly in the pan. The mixture is thick so press into the edges.
  • Bake 20-25 minutes, until the top is only a little wobbly. Let cool.
  • Once cool, make the glaze by combining the ingredients in a bowl and whisking until smooth. Pour over the brownies while they are still in the pan.
  • Let set before slicing and serving.
